Aye yai yai! I LOVE this roundup, Lisa. Mexican food runs in my blood because I eat it like, 5 days a week. Plus, you can't live in CA without eating it that often .. it's like, a California Code of Conduct rule or something. I SO cannot wait for Cinco de Mayo!
WOW, I was just surfing for some cool appetizers and found your site. Thanks for all the great recipes. My favorite (so far) is the pumpkin empanadas. they look so yummy and easy to make. As a food manufacturer we are always in search of great recipes to share with our customers. I will be sure and share these.
