Crock Pot Santa Fe Chicken

Here is another DELICIOUS slow cooker recipe I want to share with you!  I came across this recipe on and new I definitely had to try it out. You should definitely check out her blog more diet friendly recipes that are super delicious! We LOVED this chicken and it was SO SIMPLE!  What makes this chicken even more delicious is that it is only 4 Points for Weight Watchers!  Tasty and healthy??…What could be better?!

Slow Cooker Santa Fe Chicken

Prep Time 10 minutes
Cook Time 6 hours
Servings 6
Calories 271kcal


  • 1 1/2 pounds boneless skinless chicken
  • 14.4 ounces diced tomatoes with mild green chilies
  • 15 ounces black beans
  • 8 ounces frozen corn
  • 1/4 cup fresh cilantro chopped
  • 14.4 ounces chicken broth
  • 3 scallions chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon salt


  • In slow cooker, add chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt and stir to combine.
  • Place chicken breasts on top of other ingredients inside slow cooker.
  • Cook on low for 10 hours or on high for 6 hours.
  • Once cooked, about half hour before serving, remove chicken and shred. Return shredded chicken to slow cooker and stir it into other ingredients. Adjust salt and seasoning to desired taste.

    Made this tonight over white rice and it was good. I drained the beans and the tomatoes a little. We didn't have any cayenne pepper so I left that out but it was spicy enough for us without it. Thanks for posting it!

    Eating this right now and it is so DEE-LISH! I actually stopped the cooking of my chicken only 4 hours into it (had crock pot on high) because I've experience very dry chicken when it cooks so long. love this and will certainly make again! Can't wait to eat the leftovers tomorrow - will probably taste even better!

    I made this last night. I liked the taste but, the mixture was very watery. More like a soup. Mine looked nothing like your beautiful picture. Also, did you cook the scallions and cilantro with the chicken or put it on after as a garnish?

    I am attempting this recipe now, but my slow cooker just died!! I have dumped everything into a pot on the stove with the chicken on top. I have set the stove to low and am hoping it turns out just as good. Wish me luck!

    I've made this several times since we found your recipe, my husband and I both love it. Even with draining the beans and using less water in my broth (I use better than bouillon), it's still been a little runny so I remove some of the 'juice' before adding the chicken back in

    Does the chicken turn out dry? I have that the worst luck with keeping chicken most when cooking in the crockpot (despite how much I reduce the cooking time!)

      It was not dry at all. I followed the directions to a T, cooked on high for 6 hours.

    We made this tonight and served it over cauliflower "rice". It was amazing! Definitely will make again. If you've never made cauliflower rice has a video tutorial that couldn't be any easier. Try it with this chicken dish!

    This was delicious! It made enough for two dinners and one lunch for my family of three. Made burritos one night with just a little sour cream and cheese and then made quesadilla the second night. Yum! Ate it over the suggested rice for lunch. That was great too! This is a keeper!

    I make this recipe often. Gina, from has made my life a lot yummier thanks to her recipes! I serve this over spanish rice, spanish rice and beans, or I make it a little less soupy and have it on hard taco shells or have even used it at a party with tortilla chips. I usually add more chicken, tomatoes, and corn, and freeze half of it. It freezes and thaws really well. I had a friend in need of a meal, so I grabbed a ziplock bag of this out of the freezer and she and her husband raved about it. I add in more seasoning as well- I usually like to use Tastefully Simple's Southwest Seasoning. This one is a keeper- 5 minutes to make! You can't beat it!

    This is now a family favorite! My husband asks for this all the time. Every time he comes home from work, and I have the crockpot on, he asks, "Santa Fe Chicken???" We use a lot more cilantro and we either serve it in a rice bowl or in a burrito with rice (and chicken bouillon). Delish!! Thanks for the recipe!

    I made this for dinner last night, and I added the cilantro and scallions to the slow cooker as directed. when it came time to serve it, they had turned brown and were unreckognizable. how did you get then to look so fresh in your picture??

    Tried this today! Threw everything in the crockpot before I left for work, and came home to a delicious smelling house!!! I put this in a tortilla wrap and has some roasted sweet potato on the side. It was so DELISH! Next time I would use less broth, since mine was very liquid-y.

    So good!! Made burritos with this, just drained the juice quite a bit and add, cheese, guacamole and sour cream (to your individual burritos) I made this when I got home from work for the next day cuz the flavors rested is so much better

    I made this for my husband and I, and it was really good! I only had veggie broth on hand so I used that. It took 3.5 hrs on high. I also added a bit more cumin, topped it with cilantro, scallions, a little cheese, avocado, and a twist of lemon. Yum!

    Making this today. Love crockpot stuff on Sundays - makes the whole day easier :) My kitchen smells great! Can't wait to taste it. Added some smoked paprika, used red pepper flakes instead of cayenne pepper, and toasted some fresh corn from the cob on the stove for some more depth of flavor than frozen.

    I love these types of meals!! Easy, healthy, and made in the crock pot!! This is one of my favorite things to make when I have parties at my house because it's so easy!
    I ONLY COOK MINE FOR ABOUT 3-4 HOURS on LOW because it cooks so quickly (That might just be my crock pot... they say they vary) I can't imagine cooking it for 10 hours... 3-4 hours is the perfect amount of time for my slow cooker.
    It always comes out perfect... and yes it can be a little soupy, but I just use a slotted spoon to get the chicken out and we serve it in tacos with guacamole, or over rice, or as a taco salad with lettuce, tomatoes and chopped avocado! Great any of those easy ways!!
    You can't beat how easy it is to make...
