This past week has been absolutely CRAZY at my house. SO much to do and so little time. My check list has been eating away at me and I have been feeling a little burnt out.

With all the busy activities going on at my house, my slow cooker has come to my rescue more than once over the last week. I am so grateful for that wonderful appliance.

This Slow Cooker Beef Stew is loaded with yummy vegetables and flavor. My family had nothing but the best praises for this recipe! It is hearty and delicious. The best part is that it cooks for 6-8 hours and can be thrown together in the slow cooker in no time at all. Then it does all the cooking for you while you get all the other items on the check list crossed off ;)

Slow Cooker Beef Stew

Slow Cooker Beef Stew... A hearty and delicious beef stew that is loaded with yummy vegetables and incredible flavor! This is a great meal for busy days!

Ingredients 

  • 3 1/2 pounds stew meat
  • 3 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 cups chopped onions
  • 4 cups beef broth
  • 2 Tablespoons tomato paste
  • 2 cups chopped carrots
  • 4 cups cubbed potatoes
  • 1 bay leaf
  • 1 teaspoon thyme
  • 4 tablespoons minced garlic
  • 1 Tablespoon Worcestershire sauce
  • 2 cubes beef bouillon
  • 2 cups frozen peas

Instructions

  • Spray slow cooker with cooking spray.
  • Add all ingredients expect for peas and stir.
  • Cook on low for about 8 hours or until meat is cooked through and tender.
  • Remove bay leaf.
  • Add peas to stew 10 minutes before serving for firmer peas. For less firm peas, add the peas 20-30 minutes before.
  • For thicker stew, combine 4 Tablespoons water with 2 Tablespoons mesa flour (or regular flour) in a small bowl. Stir into stew 10 minutes before serving.

      I just find it in the meat section of my grocery store :) It is already cut up and ready to add. I hope that helps!

      I recommend "chuck". You will get a moister, juicier meat. Sadly, I did not use that, and the meat was very dry, and my carrots and potatoes were under cooked. A disappointment.

      Beverly, I just wanted to give you my input. You will definitely want a slow cooker. There are so many recipes on Pinterest, and it's so easy to cook with a slow cooker. Ask for one for your birthday, or Christmas. There are different prices, but mine didn't cost that much, and it works fine. You won't be sorry if you get one. We use ours a couple times a week.     Oh my goodness! I made this stew today, still have about 5 hours until dinner, but the house smells AMAZING! I can tell from the smell, this is exactly what I was looking for. I have made stew for years, but it was always missing something. I decided to try your recipe and I can tell already that it will be my go to recipe. I have already sent the recipe to two of my daughters, my youngest baby will be home from work soon and I know she will want the recipe too (she is moving out on her own in a few months).     I will brown my onions and meat on stove top first to seal in the juices add the carrots and potatoes stir it all around then transfer to slowcooker and add the rest of the ingredients

    I have just bought my first slow cooker a couple of weeks ago. So glad I found your site! Surfing the internet for recipes is sometimes frustrating with ads and sooo many screens to go to! I have used it only once so far. I made brown beans with port hocks. I was sure it would be delicious but it turned out more like a soup. Obviously, too much water! Anyway, I did some doctoring and I did eat them but was very dissapointed. I will try your recipe and get back to you. I also love to cook.

    Do you dissolve the cubes before putting in the slow cooker or just throw them in whole. Just made the stew and its cooking on low but haven't but the cubes in yet.

    Hi, Im trying this today and it looks great. My only concern is that it may be way too salty with three teaspoons of salt and two bullion cubes? I tasted the liquid after and it seems very salty. Did it seem that way to anyone?

      I wondered the same thing. I didn't put the last two bouillon in for fear of how salty it might turn out (if I'd been thinking ahead I would have used the bouillon but not the extra teaspoons of salt). Guess I'll find out this evening. How did yours turn out?

    Super disappointed... this didn't turn out at all. The meat could really use browning first and the onion and garlic cooked. It had no flavour and the potatoes, despite being cubed and cooked for 8 hours were still pretty hard :(

    Followed this exactly & ended up having to take all the potatoes & veggies out & cook them & put them back in. Basically defeated the purpose of being able to just leave it & I definitely cut it all small enough.

    I made this today, and it was SO good!! Love that it was super easy to throw together in the crock pot, and it cooked all day making our home smell wonderful, and it seemed to thicken up nicely on its own... perhaps it's because we served it over brown rice. Entire family enjoyed this - thanks for the hearty and simple yet delicious recipe!

    Made this today. It was delicious. My only recommendation is it has no thickening agent in the ingredients. You can take the stew meat and toss it in a flour before adding to the other ingredients and it should thicken it up like a stew. This was more like a soup. My entire family loves it. It will be put on our rotation of winter meals.

    Really cold day here in the northeast, and had the beef on hand, so I thought a perfect day to try this. Left out the salt and the bouillon, as I felt the broth had enough sodium. Added siliced mushrooms. Just started cooking. Looking forward to it tonight.

    Yum I am going to make it but I am using Pheasant the guys just shot at their annual pheasant hunt. I will add a little more seasoning because of the wild taste. And add beef/onion soup mix along with all you ingredients .
