Root Beer Cookies

When I was pregnant with my little girl, the ONLY thing I ever craved was Root Beer.  I had a huge fountain drink of it daily.  Typically, when a woman is done being pregnant, she can’t even bare the sight of the food she craved because she has had it WAY too much.  This is not the case for me, however.  I still LOVE Root Beer and still get cravings for it.

Fortunately for me, Root Beer makes its fair share of appearances at our BBQs and summer meals. I saw this recipe from Silver Boxes floating around and knew I had to give them a try for summer. I cannot begin to thank her enough for sharing this delightful recipe with all of us.  If you are a die-hard Root Beer fanatic like me, you are going to LOVE these cookies!

Root Beer Cookies

Perfect for summer. If you love Root Beer, you are going to LOVE these cookies!


  • 1 cup butter softened
  • 2 cups brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon root beer extract
  • 4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt


  • 3/4 cup butter softened
  • 4 cups powdered sugar
  • 3 Tablespoons milk
  • 1 teaspoon root beer extract


  • Preheat oven to 375 degrees F.
  • In a large bowl,  cream butter and brown sugar.
  • Add eggs, one at a time, beating well after each addition. Next, beat in buttermilk and root beer extract.
  • Add flour, baking soda and salt to the bowl and beat until well combined.  This is going to be a loose and wetter dough.  Don't be alarmed at the consistency of the dough.
  • DROP by spoonfuls onto a greased baking sheet.
  • Bake at 375 degrees F for 10-12 minutes or until lightly golden in color.  Remove from pan and allow to cookies to cool completely.


  • Cream butter. Add in remaining ingredients and beat until well combined.  Add more powdered sugar if it needs to be thickened up and a little more milk if you want it a bit thinner.
  • Once cookies are completely cooled, frost them.

    These cookies sound delicious! Where does one find root beer extract? I've never hear of it!

      I found it at my local Bulk Barn. Specialty food stores & health food stores usually carry it too. Hope that helps!

    I'm not pregnant, but I crave root beer all the time! It's my favorite soda--so rich and creamy; the stronger the better! When I made root beer float cupcakes, I thought I was in heaven, but root beer float cookies? Pass the plate :)

    Two new-to-me things in this recipe, Nikki! I've never baked a cookie w/ buttermilk and I've NEVER heard of root beer extract! Love both additions! I bet these taste amazing. Pair w/ a root beer float for sure!

    Hello! I'm making these this morning and they are coming out looking like cookies but are a little cake-like consistency. I also didn't notice too much of a root beer taste in the cookie not sure if it's because I used McCormick concentrate or if you get more of the taste from the icing. Please let me know if I made a mistake or if these are how they are supposed to be! I LOVEEE your site! Thanks for posting so many great recipies!

      yes the cookies are more cake-like. They are softer than typical cookies. Also, you will get most of the root beer flavor in the frosting. At least, that is where I noticed it the most :) Sounds like your doing great so far! Let me know how they turn out for you!

    Hi! Thanks for your quick reply! It sounds like they came out just how yours did! My husbands grandmother just tried them and loves them - said they were excellent! I've made quite a few of your recipies - cake batter pudding cookies, cake batter French toast, the sloppy joes, cookies and cream cupcakes (the sweet tooth fairy ones) - which were a HUGE hit, Blueberry Banana Bread . I like that it seems I can trust your recipies - before coming across you I was getting discouraged trying peoples blog recipies.

    The cookies turned out good. I didn't have any buttermilk, so I just used 3/4 cup of milk and it turned out fine. -- The frosting however was way too sickening sweet and buttery, and probably made enough for 8 batches. Couldn't taste the root beer at all over the butter. Oh well. I think the plain cookies would go fine with vanilla ice cream or something, but by themselves they don't have much root beer flavor. If I go to make them again, I'll skip the frosting, and add more extract to the cookies.

    That's so bizarre! When I was pregnant, root beer was my fave too. A&W to be exact. Loved that stuff. Still love root beer just not to the extent I wanted it when I was pregnant. Thanks for the recipe!

    If you make these cookies you need more extract in the cookie dough than this calls for. I couldn't taste any root beer in the dough. And for the frosting I had to add WAY more root beer extract. I did around 6 tsp. of extract for the frosting. The powdered sugar over powers the extract so you need much more.
