Happy St. Patrick’s Day! Are you wearing green?! Well today’s brownies are ;)

Mississippi Mud Brownies have been a staple in my home since I was a little girl. Probably since my mom was a little girl.

There is nothing better than ooey gooey marshmallow creme and smooth frosting dripping over fudgy brownies. Seriously. You don’t even care that your hands are a complete disaster because you tastebuds and tummy are completely 100% satisfied.

The thing is, I added some mint to our classic recipe and some green food coloring to add to the holiday theme!

Basically, these brownies are perfection. Ooey-Gooey-chocolate-mint perfection.

You can add some chopped nuts to the top if you prefer some added texture. My family is pretty split down the middle between the nut eaters and non-nut eaters, so I play it safe and go without, but the choice is totally yours.

If you are looking for a chewy, fudgy, tasty treat to munch on today, this is a great one!

These brownies are ooey gooey and absolutely delicious!

Ingredients
  • 4 eggs
  • 2 cups sugar
  • 1 cup butter
  • 1½ cups flour
  • ⅓ cup cocoa
  • 1 teaspoon vanilla
  • ½ teaspoon mint extract
  • 7 oz jar marshmallow cream (+3 drops green food coloring if desired)
Frosting
  • ½ cup butter
  • ¼ cup cocoa
  • 1 teaspoon vanilla
  • ½ teaspoon mint extract
  • 6 Tablespoons milk
  • 3 cups powered sugar
Instructions
  1. Grease and flour a 9″ x 13 ” pan.
  2. Preheat oven to 350 degrees F.
  3. In a large bowl, beat eggs until thick. Gradually beat in sugar. Add melted butter and beat. Add flour, cocoa, vanilla. Stir well with a spoon and pour into prepared pan.
  4. Bake at 350 degrees F for 30 minutes or until done.
  5. Remove from oven and let cool for a few minutes.
  6. While brownies are still warm, spread marshmallow creme gently on surface of cake.
Frosting
  1. Melt butter. Add cocoa, vanilla, mint extract, milk and powered sugar and stir until smooth.
  2. Spread frosting gently over warm marshmallow creme, swirling to give a marbled effect.
