Lemon Blueberry Dream
This Lemon Blueberry Dream is layer upon layer of heaven! It has a fabulous crust and various creamy layers that combine so perfectly! It has a light flavor from the lemon and topped with juicy blueberries on top.
I love the Lemon Blueberry combination. It is one of my favorites. Zest fresh flavors from the lemon and juicy pops of blueberry just fuse so well together.

Well today, we are adding one to the collection. This is such a simple dessert that people go CRAZY over. It begins with a wonderful crust and is then topped with a lemon pudding, lemon cream cheese filling, whipped topping and garnished with fresh blueberries, pecans and lemon zest! This recipe is a winner!
It would be such a huge hit at your next pot luck or get together!
- ½ cup melted butter
- ⅓ cup brown sugar
- 1 cup flour
- 1 cup pecans, chopped
- 2 large INSTANT vanilla pudding packages, dry not prepared
- 4½ cups milk
- 8 ounces cream cheese, softened
- 2 Tablespoons Lemon juice
- 1 Tablespoon lemon zest
- 8 ounces cool whip, thawed
- 12 ounce cool whip, thawed
- 2 cups blueberries
- 1 cup pecans, chopped
- Preheat oven to 350 degrees F.
- In a medium bowl mix together melted butter, brown sugar, flour and pecans. Pat into a 9x13 baking dish.
- Bake at 350 degrees F for 15-18 minutes. Cool completely.
- In a medium mixing bowl combine pudding and mild and mix well. Refrigerate for 20 minutes.
- In a medium mixing bowl beat cream cheese, lemon juice, and lemon zest. Fold in 8 ounce cool whip.
- Spread cream cheese mixture over the cooled crust.
- Carefully spoon pudding mixture over cream cheese mixture.
- Carefully spread 12 ounce cool whip over pudding.
- Sprinkle blueberries evenly over cool whip.
- Sprinkle pecans evenly over blueberries.
- Garnish with lemon zest if desired.
