Egg Salad Sandwich
Easter is approaching quickly. There are so many things and traditions I adore about Easter, but one in particular is that I absolutely LOVE decorating eggs with my family. However, we tend to decorate WAY more than we can eat, so I am always looking for new ways to use up our hard boiled eggs.
This Egg Salad Sandwich is my mom’s recipe and it is seriously fantastic! It is full of flavor and definitely full of protein. If you are looking for a yummy way to use up your hard boiled eggs, definitely give this recipe a go! It is so good and whips up in just a few minutes!

Ingredients
- 3 hard boiled eggs, diced/chopped into small pieces
- 1 Tablespoon mayonnaise
- 1 Tablespoon Relish
- ¼ tsp. dry mustard
- salt and pepper to tast
- dash of Cayenne Pepper
- 2 slices toasted bread
Instructions
- Combine chopped eggs, mayonnaise, relish, dry mustard, salt, pepper and cayenne pepper in a small bowl. Stir to combine ingredients.
- Top on one slices of toasted bread and place the other slices of toasted bread over top.

Ah yes Easter eggs! We have a tradition in Greece we paint them red and then on Easter Sunday each one takes an egg and hits the other;s egg until theirs break! The last egg standing is the winner! So as you can imagine we go through many eggs that way and it is imperative to have many recipes for egg salad because we will be eating eggs for the next couple of weeks.. at least! Happy Easter

Mmmmm. This looks really good. I have not tried adding relish to my egg salad yet. Do you use the standard sweet green relish (like you put in hot dogs) ?? If not, which type of relish do you prefer?

I use the sweet green relish in mine, But I should think the dill relish would be OK as well.
