Have you ever tried replacing the vanilla for lemon juice? It helps to keep the tang of the cream cheese and boosts the flavour. I usually add more lemon juice if I need to thin the icing further. I usually end up adding a few good splashes of it. Have never had it curdle.

I am looking for a sugar cookie icing that will set up....I like to layer my cookies to store and do not like them to stick together...would this icing fit the bill?

Are you sure the its 5 1/2 cups of powder sugar? Also please recommend which brand of cream cheese as Philadelphia cream cheese is not available in my country.

    Thanks.
