Zucchini Pancakes

My mom used to make this for an after school snack all the time.

I love these bad boys! Especially topped with sour cream! MMMMM! It fulfills that salty craving exactly the way you want it!

2 c. shredded zucchini
1/2 c. finely chopped onion
1 c. flour
1/2 c. mayonnaise
1/2 c. Parmesan cheese
4 eggs, beaten
1 tsp. lemon juice (opt.)
Salt & pepper to taste

Mix all ingredients together lightly. Pour onto hot griddle like you would pancakes.
Serve with sour cream and Enjoy!

My mom makes these all the time in the summer. We always put ranch dressing on them. It sounds really strange, I know, but it is delicious and addicting!
