S’more Pudding Cookies

There are SO many fun activities to do in the summertime! Camping is definitely one of those. Having a three-year-old and one-year-old, we don’t get out camping very often. (although sometimes, I can’t complain about that… I just love my comfy bed a little too much :) )  One of the best things about camping is, of course, the beloved S’more. I love S’mores.  I mean really though, who couldn’t… so simple and yet so fantastic!  Since we don’t get out to make authentic campfire S’mores as much as we would like to, I LOVE to involve the three simple ingredients wherever and whenever I can.

I had another craving for the Pudding Cookies the other day.

Only once again, I wanted to put another fun spin on the cookie.

Let me tell you, S’more in the form of a pudding cookie=DELISH! It is now one of my top favorite ways to enjoy the flavors of the classic S’more. Give these a try! You won’t regret it.

S'more Pudding Cookies
A delicious take on a classic treat! These cookies are soft, chewy and have the perfect combination of flavors!
Recipe type: Dessert
Cuisine: American
  • ¾ cup butter, softened
  • ¼ cup sugar
  • ¾ cup brown sugar
  • 1 (3.4 oz) box instant vanilla pudding, dry
  • 2 eggs
  • 1 tsp. vanilla
  • 3 sheets graham crackers, finely crushed
  • 1 tsp. baking soda
  • 2 cups flour, (may need to add up to an additional ¼)
  • ½-2/3 cup mini marshmallows
  • 1 cups chocolate chips, (I use semi-sweet)
  1. Cream butter and sugars together. Add in pudding mix and beat until well incorporated.
  2. Beat in eggs and vanilla until well blended.
  3. In a small bowl, stir graham cracker crumbs, baking soda and flour until evenly mixed.
  4. Add the dry ingredient mixture to the wet ingredients and beat until well incorporated.
  5. Stir in chocolate chips and mini marshmallows until evenly mixed in. Add more if desired.
  6. Bake at 350 degrees F for 8-10 minutes. You want these cookies to be slightly undercooked. It helps make them extra soft :)

      I made these cookies, and they are YUMMY! Definitely make sure your marshmallows are covered with dough so they leak less. :)

    I made these last night. Although they tasted YUMMY, they looked nothing like your picture and they were not super moist. I think it might have been my dough measuning technique. I used a standard cookie scoop to make the dough balls and they never really flatened out. How did you measure your dough in order to drop in onto the cookie sheet?

    These taste AMAZING but I can't get them off of my parchment paper. The marshmallows melted all over the place. Oh well, next time I will leave the marshmallows out & just smoosh a few on top before I bake them.

    Made these last night and they're delicious! I rolled them into 1 1/2 in balls and lightly flattened them with the bottom of a glass. The first batch I didn't flatten them so they didn't spread much and weren't cooked evenly.
    I baked them exactly 8 minutes. They definitely look under baked but once they cool they're perfect. Also, make sure all the marshmallows are covered with dough.. If they're exposed they do melt and make it hard to remove from the sheet. Thanks for the recipe!

    I made these for a cookout last weekend, and they were a huge hit; I didn't have any leftovers! I did have a bit of trouble getting some of the cookies off the baking sheet, because some of the marshmallows melted and got stuck, but I think some cooking spray oughta tackle that problem next time.     Oh my goodness! This is such a great recipe! I made it for a baking day and it was a huge hit.
    I used extra tiny chocolate chips and that really helped to make sure that the graham cracker and marshmallow were not overpowered. Also, it seemed like not much graham cracker, but the flavor really comes through and it seems to affect the texture in a really awesome way.
    Definitely a fun and easy cookie recipe that I will be using forever. I've already had lots of people ask for the recipe already!

    I tried these. DO NOT use mini marshmallows, I had a sticky mess. Other recipes use marshmallow bits. However the cookies are still pretty good.
