Peanut Butter Cookies

Confession.

I am not a huge peanut butter fan…I know, shocking.

So when I post a recipe with peanut butter, you should know its a good one! These cookies are very good, and very peanut buttery! This recipe comes from my grandma’s cookbook and are a family favorite.

PEANUT BUTTER  COOKIES

1 cup butter
2/3 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp. vanilla
3-1/2 cup flour
1 tsp. baking soda
1/2 tsp. salt
1 cup Reese’s Peanut Butter Chips (you can add more depending on your preference)

Soften butter.  Beat in Peanut Butter.  Cream together butters and sugars.  Add eggs and vanilla and mix well.  Add flour, soda, and salt and beat together.  Mix in peanut butter chips.
Bake at 350 F for 8-10 minutes.

Enjoy!

I like peanut butter, but I'm not a huge peanut butter *cookie* fan. I wonder if these would hit the spot for me, too, then. They don't look as dark brown as a lot of PB cookies....is that the lighting or just that there's less peanut butter in them? Or both?

I tend to prefer almond butter to peanut butter -- I'm wondering if I could substitute?

My daughter is a huge peanut butter fan, and was quite dismayed when years ago her school forbid all peanut products in lunches. I am going to pass this recipe on to her. Thanks!

Just finished making this recipe and thought it was absolutely delicious! I have been looking for an easy chewy peanut butter cookie. The best thing about this recipe is the amount it made; I was able to get 6.5 dozen which works out to be 100 calories per cookie. Thank you so much for posting this recipe! :)
