Ritz Parmesan Chicken

My hubby GOBBLED up this dinner!  He loved it!I love it when that happens!I love yummy chicken recipes and this one definitely makes the list!

RITZ (or SALTINE) PARMESAN CHICKEN

1/4 cup mayo
1 Tbsp lemon juice
1 cup crushed Ritz or Saltine Crackers (I used Saltine crackers because its what I had on hand and it still turned out delicious!)
1/4 cup grated Parmesan Cheese
2 tsp dried Basil
4 small boneless, skinless chicken breasts (about 1 lb.)

Preheat oven to 400 FMix mayo and lemon juice in a bowl; set aside.Combine cracker crumbs and cheese in a separate bowl.Dip mayo in mayo mixture, then in crumb mixture until evenly coated on each side and then place on baking sheet.Bake at 400 F for 20 minutes or until chicken is done.Enjoy!

    This sounds good, but I'm not a huge fan of Mayo, can you really taste it in this?

      I used Ranch dressing. It turned out great. Also I added garlic and onion powder to the cracker and cheese mixture. It is turned out really good!

    So this may be more annoying to you than anything, but in your instructions you say "Dip mayo in mayo mixture." :) It's obvious what we're supposed to dip in the chicken, but just thought you may want to change that. I'm super excited to try this tonight!

    Thanks so much for the recipe...I love all of your ideas, I want to try them all!! I tried this recipe the other night, but instead of dipping it in mayo, I dipped the chicken in fat free Ranch dressing before putting the crushed ritz crackers on....YUM! Love your blog! :)

    I just made another one of your recipes tonight, (Slow Cooker Chicken Cordon Bleu), and like the other six recipes of yours I have tried, it is wonderful! For those of you who don't like mayo, you might want to try nonfat plain Greek yogurt. That's how I'm planning to try this. I will probably put the chicken, yogurt and lemon juice in a large Ziploc bag and let it sit in the fridge for about 30 minutes before coating and baking it. That's how I make other chicken recipes, and it seems to help the coating stay on better. Maybe Nikki could comment on this suggestion? Would it change the recipe too much? Thanks so much for all your work. I'm anxious to try the other recipes I've saved on Pinterest!
