Fancy Peas

I am going to be honest. Vegetables are sometimes still hard for me to enjoy. Specifically peas. Don’t know why but I struggle to enjoy them.

That is, unless they are made like this.

But what is not to love about creamy flavorful peas- peas accompanied by mushrooms, onions and of course bacon. Bacon. What ingredient isn’t jazzed up by using bacon?! ;)

This recipe is from my grandma’s cookbook she gave me 10 years ago and let me tell you, there is a reason this recipe has stuck around.

Ingredients
  • ¼ cup butter
  • 1 medium onion, finely chopped
  • 4 cups sliced mushrooms
  • 4 cups frozen peas
  • 2 teaspoons chicken granules
  • 1 cup cooked and chopped bacon
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1½ pints sour cream
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large sauce pan, melt butter and saute onion and mushrooms. Add chicken granules. Add peas, bacon, salt, pepper and sour cream; cook for 2 minutes.
  3. Pour into casserole dish and bake at 350 degrees F for 20 minutes until heated through.

      I use Wyler's Instant Bouillon Chicken Granules. It is found next to the bouillon cubes at the grocery store. Hope this helps.

    This recipe looks awesome. I would be grateful if you would address two questions that came to mind as I read your recipe: 1) how many servings would you estimate this recipe makes and 2) how many slices of bacon does it take to fill a measuring cup when they are cooked and chopped?

      I used Better Than Bouillon chicken base. I dissolved 1 teaspoon in a couple tablespoons of hot water, then mixed that into the sour cream. Everyone loved it.

    what is the difference between chicken granules as opposed to chicken bullion? Will it make a difference if I use bullion instead?

    I made these for Easter and everyone really enjoyed them and asked for the recipe! I doubled everything in the recipe except the sour cream. It calls for 1 1/2 pints which would have been 3 pints. I used 2 pints and that was plenty. It was a nice change from the usual vegetables. I'll make this again! Thanks Nikki!
