Ingredients
  • 6 cups sweet potatoes, peeled and cubed into bite size pieces
  • ⅓ cup olive oil
  • 2 teaspoons garlic powder
  • 1½ teaspoons salt
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne pepper
  • 1 cup grated Cotija Mexican cheese
Instructions
  1. Preheat oven to 450 degrees F.
  2. Spray an 11x7 baking dish with cooking spray.
  3. In a large bowl, combine all ingredients and toss until evenly coated.
  4. Place in the baking dish and bake for 30 to 40 minutes, until potatoes are tender.
