Broccoli Cheddar Soup

I LOVE Broccoli Cheddar Soup.  My mom made this soup all the time during the fall and winter seasons growing up, and now I make it for my family.  It is so delicious and comforting on a colder day!

Broccoli Cheddar Soup

Prep Time 15 minutes
Cook Time 40 minutes
Servings 6
Calories 717kcal

Ingredients 

  • 1/2 cup butter
  • 1/2 cup flour
  • 2 cups water
  • 2 cups heavy cream
  • 4 cups chicken broth
  • 16 ounces frozen chopped broccoli
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces velveeta cheese you can sub shredded cheddar cheese
  • 8 ounce sharp cheddar cheese

Instructions

  • Mix water and heavy cream together and set aside.
  • Melt butter and flour together to form a roux. Slowly add in heavy cream/water mixture stirring constantly. Add in chicken broth still stirring. Let simmer for 20-25 minutes to let the soup thicken up.
  • Add in broccoli and cook over low heat for an additional 20-25 minutes to continue to thicken soup as well as cook and soften the broccoli.
  • Sample and add salt and pepper to taste.
  • Cut 8 oz. Velveeta into cubes and drop into soup and stir until melted. Add in sharp cheddar and stir until blended.

      Love Panera's and they add some shredded carrots and a little cauliflower. Which I will do with this recipe.

    This was very good in homemade bread bowls. I made it with 12oz evaporated milk and 6.5 cups vegetable broth for the liquids (instead of the cream, water, and chicken broth). I also used 20 oz of fresh broccoli instead of the frozen. Thank you for the recipe!

    You included the recipe for the soup but omitted what you put the soup in. It is not a bowl is it a loaf of bread that you made a hole in and put the soup in there and if so what kind of bread will hold the liquid soup without it oozing through.

    Has anyone tried this using a gluten free flour? If so, did it turn out good and what kind/brand of GF flour did you use? I want to make this for my Hubby, but he has to do gluten free because he has Celiac.

    This was delicious. I added 2 bags of broccoli ( my daughter LOVES broccoli) used my potato masher to "mash" broccoli up a little. My tummy hurt so bad after eating because I ate so much, even had some for breakfast. Lol. Nice job on this one, will make again and again. :)

    I love your recipes, I just wish you had nutritional facts, serving size etc it is hard to break down, both my spouse and I are diabetics this would be good without the bread bowl, but it would nice with carb and calorie count

    Very good soup. I always follow original recipe before or if I make changes, i'm glad for that because the velveta makes a wonderful silky texture & thickening agent. You do not taste velveta as the broccoli and sharp cheddar is at the forefront.
    I love having good basic recipes, I thank you for this one.
    Sourdough is one soup bowl that doesn't leak, but hard to find in some places.

    I made your Broccoli Cheddar soup a few nights ago when my son requested it. I went to your recipes after looking at a few others and, as usual, your recipe stood out to me. It took a little longer to thicken the base but was just right once the broccoli and cheese were added. After the broccoli had cooked a few minutes, I used my immersion blender to break up the broccoli and puree some of it. Then I added cheddar cheese and sharp cheddar rather than Velveeta. It was very good and was a big hit in our family!!
