School is almost out for my kiddos. Which means we are in crunch mode as classes, sports and dance come to an halt for summer. It seems like everything is finishing all at the same time which makes for some pretty hectic last few weeks.

When it gets like this, dinnertime can often get neglected, unless it is quick and easy. This One Pot Spinach Chicken Pasta is PERFECT for busy days. It only requires ONE POT to make and is ready in less than 30 minutes. I call this recipe a huge win.

Ingredients
  • 4 Tablespoons vegetable oil
  • 3 boneless skinless chicken breasts, cut into bite size pieces
  • 16 ounces sliced mushrooms
  • 4 garlic cloves
  • 2 cups pasta, I like cellentani pasta
  • 4 cups water
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 Tablespoons basil
  • 3 cups chopped spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh Parmesan cheese for garnish
Instructions
  1. In a large sauce pan over medium heat, heat oil. Once oil is heated, add chicken and cook chicken over medium high heat for about six minutes until almost done.
  2. Add mushrooms and garlic and cook for another 4 minutes until mushrooms are tender.
  3. Add pasta, water, salt, pepper and basil. Bring to a boil and cook until pasta is tender about 10 to 13 minutes. Water should be almost gone.
  4. Add spinach, cream and grated Parmesan and bring to simmer.
  5. Serve immediately.
  6. Garnish with fresh Parmesan.

    Thank you for your recipe! I tried it tonight without chicken and mushrooms since we didnt have any in the fridge. It still came out so good! Im also happy coz i was able to use up the leftover heavy cream and spinach. I chopped and used up half of a big package of spinach. Finally no more spinach going to trash this week! Your recipe is so easy and this is my first time making a one pan pasta dish. My little girl saw the spinach and didn't want to try it, but after i convinced her to try a bite, she kept coming back for more! Thank you again.

    I've made this recipe twice now, and my family loves it! I sub low sodium chicken broth for water to increase the flavor and cut out a little of the fat by using half and half instead of cream. Can't beat a flavorful one-pot dish!

    I'm not sure what went wrong but the water didn't reduce enough. I followed the recipe exactly and the pasta was cooked to the right doneness by about 13 mins but there was so much water left that I had to remove some before adding the cream. Yet it still ended up super liquidy & didn't thicken. I really like the flavor and ingredient combo so please help me figure out the problem!!

    This recipe must be a hoax to sabotage your dinner. Who cooks pasta with 4 cups of water and doesn't need to drain it? Two tablespoons of basil is disgusting, also. It only took us a few seconds of starting this recipe before we realized how much we needed to modify. Less than one star. Boo.

      It took us ~23 mins to get the water to reduce far enough to add the cream, and I was worried that the pasta would be massively overcooked, but it wasn't bad (I used cavatappi). I also used fresh basil and it was nowhere near too much. I'd probably use a little less water next time, just for impatience's sake, but the recipe is good. Give it a try.

      This recipe is a plan to sabotage dinner? What a poor and immature attitude you have! If you don't care for basil, why even add it? Just because a minor ingredient in this recipe does not agree with your pallet, you should not rate it with 1 star. On another note, you have made it clear that you do not know how to cook at all. If you did, you would know that 4 cups of liquid would easily get absorbed by the pasta and there is no need to drain it. Get a clue lady. You should appreciate the fact people take their time to post recipes for bad cooks like yourself or else you would be in big trouble!

    This sounds healthy and delicious! Was wondering if I could use soy creamer instead? And not put the Parmesan cheese in it since I'm dairy free
    Also, is there another vegetable besides mushrooms I can use?

    I made this recipe using some poached chicken that I had poached with lots of herbs and spices. Plus I added some minced onion, nothing but rave reviews from my family and friends. Thank you for a great recipe that will be a regular one in our household.?????

    I love this!!! I made some modifications:

    1. 1 can of cream mush soup
    2. Plain Greek yogurt (non fat) maybe 1 cupish.
    Aaaaaaahhhhmazing!!! Cuts down on calories and far from all the heavy cream of 1/2 1/2.
