My husband loves breakfast foods. It very well could be his favorite meal of the day. Tater tots, eggs, sausage and cheese happen to be some of his favorite items, so you can imagine his delight when he tried this recipe :)

This breakfast is a winner and will be a regular in our breakfast rotation!

This recipe is extremely simple to make and the prep work only takes about 5 minutes. Each bite is oared with a flaky potato, gooey cheese, yummy eggs and flavorful sausage. It is the ultimate breakfast meal.

Tater Tot Breakfast Casserole

All of your favorite breakfast items combine to make one out of this world meal! Tater tots, eggs, sausage and cheese come together in a unique way for an easy and delicious breakfast!

Ingredients 

  • 1 pound cooked ground sausage
  • 32 ounces frozen tater tots
  • 12 eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • 1/3 cup chopped green onions
  • 2 cups grated cheddar cheese

Instructions

  • Preheat oven to 350 degrees F.
  • Spray the bottom of a 9x13 baking dish with cooking spray.
  • Place tater tots on the bottom of the pan.
  • Sprinkle sausage over tater tots.
  • In a large mixing bowl, add eggs, milk, salt pepper, mustard and onions. Whisk together until well blended. Add cheese and mix again. Pour over tater tots and sausage.
  • Bake at 350 degrees F for 1 hour.
  • Drizzle with some hot sauce, ketchup or whatever you like if desired.

    This sounds delicious!! As someone who likes their tater tots extra crispy, do you think I could bake them a few minutes before adding the rest of the casserole ingredients?

      The recipe cooks for approx 1 hour. I guarantee they will come out crispy. Not soggy at all. Enjoy it. Prepare the recipe to the letter and you will not be disappointed.

    This says 12 eggs. I hope it's only 2?

      @Kasey 12 eggs is accurate. This is a casserole made to feed an entire family - 2 eggs would do nothing to bind 32 oz. of tater tots and a pound of sausage. Keep in mind you would likely only eat 1/6 of the casserole as a portion which means you would only be eating approximately 2 eggs!

      Also I replaced the 1/2 tsp dry mustard with 1 tablespoon minced garlic, and used Jimmy Dean Premium Pork Sage Sausage. Result was DE-LI-CIOUS!!! So far our breakfast loving family has had it for Brinner, but I can see Breakfast & Brunch coming right around the corner! ;)

      You are correct. Perfect for a weekend brunch. It is a hefty casserole and it can be served with avocado slices. I myself made waffles to compliment it. My daughter who is not a breakfast person loved it.

      I couldn't find the answer myself, so I looked up several other tater tot breakfast bakes and they all say frozen. I'm guessing to help keep their shape.

      I used them frozen. Recipe turned out fantastic. I substituted Pepper Jack Shredded cheese vs Shredded Cheddar cheese.

    Looks delicious! Can this be made the night before and heated up in the morning?

      Yes it can. That is what I do. Prepare it the night before, cover it with some saran wrap.
      Set my alarm earlier than usual to place casserole in oven and lay back down for another hour when the casserole is ready to go. Give it at least 15-30 minutes to cool.

      Tater tots are like hash browns, both are made from shredded potatoes. Tater tots are little cylinder shaped bites of shredded potato. They are pre-cooked (fried) and frozen. Very popular in America as they are easy and very good. They have good potato flavor without the mess of cutting your own, and a great alternative to french fries, because you bake them instead of frying them - less fat = more healthy.
      You will find them in the frozen foods area of your market if they carry them. You could shred your own potatoes, but you must press out all of the water before cooking. Then partially fry them to get that crunchy surface. Drain fat from them well, then carry on with the rest of the recipe.
      But you can see why breakfast dishes like this are created - amazingly good, yet fast and easy.

      You can probably substitute shredded or cubed russet potatoes. In the USA you can buy most of these types of potatoes in the frozen section of local grocery stores.

    Possible to sub sweet onion for green onion or maybe chives?

      That's exactly what I did. Had no green onions, so I used a Vidiala onion. Gave it a great taste. I be chives would be just as good. Experimenting is the spice of cooking.

    This sounds wonderful. I'm assuming the tater tots should be thawed?

      I have made this recipe several times and every single time I have used them frozen and does not affect the taste. Now your sausage (I use Jimmy Dean Hot Breakfast sausage) must be thawed out to make it easier to cook it and drain it.

    My family LOVED this breakfast dish. I did sprinkle a bit more cheese on the top 5 minutes before taking it out of the oven. Next time, I plan to add mushrooms and diced green peppers instead of the green onions. Served with chunky salsa was wonderfull. Thank you for sharing this recipe!

      I sliced a zucchini very thin and place it between taters and sausage and it turned out great. Have to find a way to sneak in the veggies. My daughter did not even notice and she does not like veggies.

    This recipe is amazingly adaptable, it's hard to go wrong with it. I prefer ham over sausage, any sort of onion will work (sweet, yellow, red, white, chives, even leeks), I love Gruyere cheese (a type of swiss cheese, harder with no holes), and lastly you can switch out the dry mustard for any of several other spices. I used nutmeg to enhance the flavor of the cheese, but you could also use dill weed, garlic, cilantro and many others.

    I've made breakfast casseroles with regular or diced hash browns, and by far, using tater tots is the best for some reason. I sometimes add any extra veggies I have around to change it up a little. I've also added garlic and used maple sausage. But you cannot go wrong with this basic recipe as is. This is now my breakfast casserole recipe go-to.

    I make this a a supper dish at home, and make it every year as part of our annual brunch menu.
    I usually substitute vegetarian breakfast sausage, so everyone can enjoy it. I also add sautéed onions and garlic. Delicious! People ask for the recipe.
