Baked Cheesy Omelet

Do you love easy breakfast recipes that do require you at the oven the entire time? This is one of those easy recipes thats basically a dump, pour and bake. I love this method for cooking an omelet because it serves a crowd and requires minimal work. This recipe comes form my grandma’s cookbook and is one I can always count on her making whenever we visit. Packed with protein and cheesy goodness, this is a breakfast everyone will love!

An easy method for cooking an omelet and it feeds a crowd!

Serves: 12
Ingredients
  • 12 eggs
  • 16 oz. sour cream
  • 1 cup. Picante sauce
  • 8 oz. Monterey Jack cheese
  • 8 oz. cheddar cheese
  • ½ cup bacon, cooked, crumbled and chopped
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together eggs and sour cream until well blended and combined.
  3. Grease a 9x13 pan.
  4. Spread Picante sauce on the bottom of pan.
  5. Sprinkle with 4 oz. Monterey Jack cheese and 4 oz. cheddar cheese.
  6. Pour egg mixture on top of the cheese.
  7. Sprinkle crumbled and chopped bacon over the top of egg mixture.
  8. Sprinkle remaining cheese on top.
  9. Bake at 350 degrees F for 35 minutes or until egg is firm in center.

    Hi Nikki! Quick question for ya... Can this be made without the Picante sauce? Would I need to replace it with something else if I did omit it? I want to try this but Picante sauce is not something we ever have on hand and my kids are not fond of salsa flavors. Thanks for any insight you have.

      Definitely! It just adds some salsa flavor, but if your kids aren't a fan of it, you can totally omit it!

    I have made this twice now and it is delicious! I did add salt and pepper though. The first time i used picante sauce and the second time i used salsa. Not sure what the difference is between the two, but i liked the picante sauce better, which is what the recipe calls for, but my husband picked up salsa instead. It was still really good though!!

    I have made this several times for breakfast for church. It's so easy to throw together and bakes just as your directions state. I always come home with an empty dish!

    Made this today and my husband said it looked and tasted restaurant worthy! I halved the recipe and it worked great for same amount of time. This will definitely go on my Christmas morning menu when the gang is all here!

    I've made this three times and am in the process of shredding cheese for another go tomorrow. Everyone loves the texture and taste. It stays hot for a long time, which is nice for a buffet breakfast. The picante on the bottom adds exactly the right touch of flavor. This time around, I'm using a pepperjack cheese for a little more zing. Thanks for the recipe!

    For as long as I can remember we have had this on Christmas morning along with monkey bread. We omit the salsa and line the buttered baking dish with sliced cheese. Works with bacon or sausage or both! You can even add some sautéed veggies Reheats okay the next day but really best fresh.
