Fall weather is officially here. We were down in the 40s for the high for most of last week with an on and off rain almost everyday- which we desperately needed. These cooler and colder days have me wanting to bake constantly. It helps warm up the house and makes it smell wonderfully.

This Stuffed Chipotle Bacon Chicken was HUGE hit at my home. My husband couldn’t stop talking about it and after every bite he gave some new compliment in regards to its flavor.

It does have a kick of heat, but don’t be discouraged by that because the creamy sauce helps cool it down while complimenting the delicious flavor. My six year old said, “This is a little spicy but it’s so good!” When he gives the stamp of approval, you know you’ve got a winning recipe. He is so picky so I was so happy he loved it as much as he did!

If you are looking to bring the taste of a 5 star quality restaurant to your home, this is the meal to do it with! It is absolutely fantastic!

Ingredients
  • 4 chicken breasts
  • ¼ cup cooked and chopped bacon
  • 8 ounces cream cheese, softened
  • 2 Tablespoons chopped chipotles in adobo sauce
  • 4 strips uncooked bacon
Sauce
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 2 cups heavy cream
  • ¼ cup milk
  • 1 teaspoon chicken bouillon
  • 2 Tablespoons chopped chipotles in adobo sauce
  • 1 teaspoon salt
  • ¼ cup sour cream
Instructions
  1. Preheat oven to 350 degrees F.
  2. Slice chicken lengthwise, but not all the way through. Slice far enough to create a pocket. Set aside.
  3. In a small bowl, mix cream cheese, 2 Tablespoons chopped chipotles and ¼ cup chopped bacon.
  4. Divide cream cheese mixture into 4 parts and stuff inside the chicken.
  5. Wrap a strip of bacon around each piece of chicken. Set aside.
  6. Heat cast iron skillet to medium high. Add 2 Tablespoons of oil and heat.
  7. Add the chicken.Cook chicken 3 minutes per side to get a nice sear and then place cast iron skillet in the oven and bake for 25 minutes, or until chicken is cooked through.
  8. While chicken is cooking in the oven make sauce.
Sauce
  1. Melt butter over medium high heat in a medium sauce pan. Add flour and cook 1 minute.
  2. Add cream, milk, bullion, chipotles, and salt.
  3. Stir constantly until bubbly. Reduce heat and add sour cream. Cook until creamy.
  4. When chicken is cooked remove chicken from oven and serve with chipotle sauce.
