Stuffed Chipotle Bacon Chicken |

This Stuffed Chipotle Bacon Chicken is a phenomenal meal that tasted like it comes from a 5 star restaurant! It has a kick of heat from the chipotle peppers but is complimented and cooled down with a deliciously creamy sauce. The chicken is wrapped in bacon for an added wonderful flavor.
- 4 chicken breasts
- ¼ cup cooked and chopped bacon
- 8 ounces cream cheese, softened
- 2 Tablespoons chopped chipotles in adobo sauce
- 4 strips uncooked bacon
Sauce
- 2 Tablespoons butter
- 2 Tablespoons flour
- 2 cups heavy cream
- ¼ cup milk
- 1 teaspoon chicken bouillon
- 2 Tablespoons chopped chipotles in adobo sauce
- 1 teaspoon salt
- ¼ cup sour cream
- Preheat oven to 350 degrees F.
- Slice chicken lengthwise, but not all the way through. Slice far enough to create a pocket. Set aside.
- In a small bowl, mix cream cheese, 2 Tablespoons chopped chipotles and ¼ cup chopped bacon.
- Divide cream cheese mixture into 4 parts and stuff inside the chicken.
- Wrap a strip of bacon around each piece of chicken. Set aside.
- Heat cast iron skillet to medium high. Add 2 Tablespoons of oil and heat.
- Add the chicken.Cook chicken 3 minutes per side to get a nice sear and then place cast iron skillet in the oven and bake for 25 minutes, or until chicken is cooked through.
- While chicken is cooking in the oven make sauce.
Sauce
- Melt butter over medium high heat in a medium sauce pan. Add flour and cook 1 minute.
- Add cream, milk, bullion, chipotles, and salt.
- Stir constantly until bubbly. Reduce heat and add sour cream. Cook until creamy.
- When chicken is cooked remove chicken from oven and serve with chipotle sauce.
