Lemon Sheet Cake

Growing up, I actually hated lemon desserts. I don’t know what was wrong with my but I was not on board with the tart flavors. However, I have come to LOVE lemon! There is such a light, airy and refreshing flavor in everything it touches.

Now that summer is here, so are all the family get togethers, pot lucks and reunions. Whenever I am in charge of bringing a dessert, I love to bring a sheet cake. They serve a crowd, are super simple and taste SO good.

This Lemon Sheet Cake will be a hit wherever it goes! Be sure and make it this summer, everyone who tries it will thank you for it :)

Lemon Sheet Cake
 
This Lemon Sheet Cake is refreshing and mouthwatering delicious. A light lemon frosting grazes the top of the moist cake making each and every bite bursting with flavor.

Ingredients
  • 2 cups flour
  • 2 cups sugar
  • 1 cup butter
  • 1 cup water
  • ½ cup buttermilk
  • ½ teaspoon baking soda
  • 2 eggs
  • 2 Tablespoon lemon juice
  • 3 Tablespoon lemon zest
FROSTING
  • ¼ cup butter, softened
  • ⅓ cup sour cream
  • dash of salt
  • 2 Tablespoon lemon juice
  • 1 Tablespoon lemon zest
  • 2½ cups powdered sugar
Instructions
  1. Preheat oven to 400 degrees F.
  2. Spray 10x 15 inch baking sheet with vegetable spray.
  3. In a large mixing bowl combine flour and sugar and whisk together.
  4. In a microwavable bowl combine butter and water and microwave on high until the butter is melted.
  5. Add hot liquid to flour and sugar mixture and mix well.
  6. Add buttermilk and stir again.
  7. Add baking soda and stir again.
  8. Add eggs.
  9. Add lemon juice and zest and mix again.
  10. Pour into cookie sheet and bake for approximately 20 minutes or until cake is done. (It will bounce back to the touch when it is done.)
  11. Cool completely and the frost. You may want to garnish with lemon slices
Lemon Frosting
  1. Mix all ingredients in medium mixing bowl and beat until creamy and smooth.
