Krispie Ice Cream Dessert
Sorry for the MIA the last few days. I have been so busy this last week planning and getting ready for my husband’s big 30th birthday party. I threw him a “murder mystery” dinner party and it was an absolute riot! I was so nervous about planning and making a full course meal for 14 people (appetizers, drinks, dinner and dessert) but it all came together so nicely. Many of you may have been to or even hosted one of these parties before. They are really a lot of fun, especially if people dress up for the part and get into character. Here is a picture of our guests (my sister is the cute prego one in the top left corner pictured with her cute hubby, and I am 2 weeks away from having a new baby niece… SO excited!):
and here is the hubby and me. I am a scientist holding a calculator (you can’t really tell from the picture so thought I would clarify :) ) and he is the town doctor. And yes, I am substantially shorter than my husband :)
anyway, that is just some pics to share with you of why I have been a little absent, but have no fear- I am back and ready to get back into the swing of things!
Now let’s introduce today’s recipe.
My sister brought this dessert to a family get together a few months ago.
At that time, she was not eating any white flour for health reasons (she could have wheat flour, so it wasn’t gluten free). When I heard she was in charge of the dessert, I will admit, I was a little nervous. All the desserts I had come to know and love contain flour- and lots of it. I hadn’t really experimented with other types of flour yet to know how they affected taste and texture, if at all. To me, not being able to eat flour would be one of the HARDEST things I would have to do. I know many of you live gluten free lifestyles, either by choice or by dietary needs, and I completely commend you for it. Seriously. Anyway, she walked in the door with this incredible dessert, and after one bite I was sold! It is fabulous. No white flour and STILL absolutely delicious. Granted it uses Rice Krispies and I already loved those, but it made me realize that there are a lot of options out there that can still make your food delicious without compromising on flavor!
It tastes like fried ice cream to me, but SO much easier! No frying or baking required! This dessert is super easy to make for a crowd and will leave them raving about it!
- ¾ cup butter, softened
- 1½ cup brown sugar
- 3¾ cups Rice Krispies cereal
- ½ gallon vanilla ice cream, softned to a workable temperature
- favorite ice cream toppings, optional
- In a large bowl, mix softened butter, brown sugar and Rice Krispies cereal together.
- Spread ½ of the Rice Krispies mixture evenly on the bottom of a greased 9x13 pan.
- Smash a layer of vanilla ice cream over the top of Rice Krispie layer until evenly distributed and as flat as possible.
- Sprinkle remaining ½ of the Rice Krispies mixture over the top of ice cream layer.
- Freeze until set up and ready to serve.
- When ready to serve, remove from freezer and cut into squares. You can serve it topped with your favorite ice cream flavors or just as is. Either way is delicious!

Fun idea for Rice Krispies and even more fun pics! Love them! What a fun time and you pulled this one off without a hitch and didn't miss a beat..even for dinner for 14. Wow! And yes, living GF or nearly GF can be tricky but it becomes second nature, really, it does!

Sounds delicious! I made up a quick cheat version of that a couple of years ago - just rice bubbles (Rice Krispies for you guys in the US) and vanilla icecream. smoosh it all together and serve. Caramel topping optional. It probably looks a whole lot less appetising than your sister's dishy dish, but it tastes AH-Mazing!

My mother just to make something kind of like this but used rice krispies, creamy peanut butter, corn syrup and layering ice cream between. As we got older we would make our own version by just mixing it all together in a bowl if there wasn't any in the freezer already made.
Love this recipe and I added 1 tsp. cinnamon. Made this perfect!

Nikki, we had some of my husband's work friends over for dinner last night, and I wanted to make something easy that would appeal to kids and adults. So my 10 year old daughter helped me whip this recipe for dessert just before they arrived. I was nervous trying out a new recipe on folks we don't know, but I know all of your recipes are delicious, so we went with it. Happy to say that it was a big hit! I love rice crispies, and I bet this is incredible!
How about letting the ice cream sit out a bit to soften on the counter first? Will it refreeze nicely? I wouldn't want it to get those ice crystals in it. Just wondering if anyone has tried it.

It's really good with Rice Chex , too. That's how my mom always made it. It's always a hit.
I used to make a similar recipe years ago....with Rice Chex cereal and almonds! Yummy!
