Grasshopper Mint Cookies

The holidays are a time where mint becomes a star flavor of many desserts. Something about it gets the soul excited for the holidays and festivities :)

These Grasshopper Mint Cookies are super easy to make. The cookie base couldn’t be any simpler. It is a soft and chewy cookie that pairs so nicely with the mint frosting and chocolate ganache.

If you are in need of a yummy cookie exchange idea, this recipe is phenomenal! Not to mention they are BEAUTIFUL! The layers are stunning.

My kids kept trying to sneak some when I wasn’t looking, but I thinking the chocolate smeared all over their faces from gobbling up these cookies as fast as they can was a complete giveaway on their guilty faces.

Grasshopper Mint Cookies
These cookies are soft, chewy and delicious! The mint flavor is the perfect flavor for the holidays and cookie exchanges!
Recipe type: Dessert, Cookies
Serves: 30-36 cookies
  • 1 box devil's food cake mix, dry not prepared
  • ½ cup butter, softened
  • 2 eggs
Mint Frosting
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 3 Tablespoons milk
  • 1 teaspoon mint extract
  • ½ teaspoon salt
  • 4 drops green food coloring, optional
Chocolate Ganache Frosting
  • 1 cup chocolate chips (milk chocolate or semi-sweet chocolate chips will work)
  • ¼ cup heavy cream
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, beat butter, cake mix and eggs until smooth until dough is formed.
  3. Roll cookies into 1-inch balls and place on greased cookie sheet.
  4. Bake at 350 degrees F for 7-9 minutes.
Mint Frosting
  1. Cream butter in a medium mixing bowl. Add powdered sugar, milk, mint extract, salt and green food coloring. Beat until smooth, adding more powdered sugar and milk as needed to reach desired consistency.
  2. Frost cool cookies with mint frosting.
Chocolate Ganache
  1. In a microwave safe bowl, combine chocolate chips and cream. Heat in 30 second increments, stirring in between each increment until smooth.
  2. Glaze the tops of the mint frosted cookies with the chocolate ganache.
