Cinnamon Roll Chex Mix

Hi food fans! Kara from Creations by Kara here.I’m so glad to be guest posting today while Nikki is spending time with her hubby and family.

I just found her site a few months ago, but I love it!

She has posted some amazing recipes!

Today I am sharing a super yummy snack recipe. (OK, maybe it falls more into the treat category.)

Either way, it is delicious! Whenever I take it to potlucks or neighborhood parties, I come home with an empty bowl.

It is also a hit with teenagers. My 17yo took it to a party and said all his friends raved about it.

Cinnamon Roll Chex Mix

1 1/4 cups brown sugar

1 tsp cinnamon

1/2 cup butter

1/4 cup corn syrup

1/2 tsp baking soda

1 tsp vanilla

1 box Rice Chex or Corn Chex

1/2 cup white chips

DIRECTIONS:Pour cereal into a very large mixing bowl and set aside.

Combine brown sugar, cinnamon, butter, and corn syrup in a saucepan.

Bring to a boil, stirring constantly.

Remove from heat and stir in soda and vanilla.

Pour over cereal and stir lightly till all pieces are coated.

Spread onto a greased cookie sheet with sides.Mine is 15×10″.

Bake at 250° for about 30 minutes, stirring every 10 minutes.

Pour onto waxed paper to cool.

Melt white chips in a glass bowl in the microwave at 50% power, stirring every 30 seconds.

Drizzle over cooled Chex mix.

How easy was that?

Try not to finish off the whole bowl at once. :)

    How big is that box of Rice Chex? I have to provide a snack next week, and a couple of people are gluten intolerant. I'm betting this will be a HIT.
