Welcome to Monday. And I have the perfect kick start recipe for this week.

Snack cakes are awesome because you can justify them for many occasions throughout several points of my day. Breakfast, snack, dessert… the options are endless ;)

The applesauce in this Applesauce Snack Cake provides it with such a nice texture and flavor.

This cake is perfectly moist and filled with chocolate and several other incredible ingredients!

Ingredients
  • 2 cups applesauce
  • 1½ cups sugar
  • ½ cup butter, softened
  • 2 eggs
  • 2 cups flour
  • 1 Tablespoon cocoa
  • 1½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ cup semisweet chocolate chips
Topping:
  • ½ cup semisweet chocolate chips
  • ½ chopped pecans
  • 3 Tablespoon brown sugar
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, combine applesauce, sugar, butter and eggs. Add flour, cocoa, baking soda, salt, cinnamon, nutmeg, and cloves. Stir in chocolate chips.
  3. Pour into a greased 9x13 baking dish.
  4. Combine the topping ingredients and sprinkle over the cake.
  5. Bake 350 degrees F for 35-40 minutes, or until done. Cool on a wire rack.
