**As a word of caution, this recipe does contain raw eggs, which is what makes this a French Silk Pie. Raw eggs always pose the risk for salmonella so make sure you use fresh, refrigerated, clean, high grade and pasteurized eggs to reduce the risk. Pregnant people, older folks, young children, babies and people with compromised immune systems are at a higher risk for getting salmonella. 

It was a couple Thanksgivings ago I made the BEST EVER CHOCOLATE SILK PIE and it is beyond delicious! This year I wanted to put another spin on it and make it even chocolatey than before. This one has a chocolate Oreo Crust and is garnished with plump and juicy strawberries on top.

My mom and I got together to make and test a few recipes a couple weeks ago and this Chocolate Strawberry Silk Pie was definitely one of the biggest hits. It is sweet and rich and absolutely amazing! The strawberries are obviously optional, but I have always loved the chocolate-strawberry combo and thought it would be a delicious addition to the recipe.

What is the difference between French Silk and Chocolate Cream Pies:

Chocolate Cream Pies tend to be filled with pudding whereas French Silk Pies contain eggs, butter, and chocolate.

Why is my Chocolate Silk Pie Grainy:

Using ultrafine sugar will help reduce graininess. I use regular granulated sugar when I can’t find the ultrafine and just make sure to beat it long enough. I have never had any problems yet but this is one question that is commonly asked. Using ultrafine sugar and/or beating long enough help to reduce the grainy texture.

Ingredients
Oreo Crust
  • 26 Oreos
  • 5 Tablespoons melted butter
Chocolate Silk Filling
  • 4 oz. unsweetened baking chocolate
  • 1 cup butter, softened
  • 1½ cups sugar
  • 1½ teaspoons vanilla
  • 4 pasteurized eggs
Whipped Cream Topping
  • 2 cups heavy whipping cream
  • ⅓ cup sugar
  • ½ teaspoon vanilla
Toppings (optional)
  • 1 cup sliced strawberries
  • Hot Fudge to garnish
Instructions
Oreo Crust
  1. In a food processor blend Oreos until small crumbs.
  2. In a medium mixing bowl combine Oreos and melted butter and mix well.
  3. Press Oreos evenly in a 9 inch pie pan to make the crust. Refrigerate for 30 minutes.
Chocolate French Silk Filling
  1. In a small microwave safe bowl, melt chocolate in 30 second increments, stirring in between each increment until smooth. Let cool down and set aside.
  2. In a large bowl, cream and beat butter and sugar for about 2 minutes until fluffy. Add melted chocolate to butter mixture. Add in vanilla and beat until combined.
  3. Continue to beat mixture for 15-20 minutes at medium speed, adding eggs in one at a time spacing them about 5 minutes apart before adding the next one.
  4. Pour into Oreo crust and spread evenly. Chill for 1-2 hours.
Homemade Whipped Cream Topping
  1. Beat heavy cream on high, gradually adding in sugar and vanilla until soft peaks form.
  2. Spread or pipe prepared whipped cream over pie.
Toppings
  1. Arrange strawberries over the whipped cream.
  2. Drizzle slightly warmed hot fudge over strawberries.
