Today’s recipe is pretty special. Almond Coconut Fudge. If you love rich fudge, you will LOVE this recipe.

The filling is a creamy, marshmallowy coconut mixture topped with toasted chopped almonds. It tastes like you are biting into a fudge version of the ever so popular candy bar, Almond Joy.

Almond Joys happen to one of my family’s favorite candy bars so this fudge was a huge home run!

A word of advice for this recipe. The filling can make it difficult to cut into nice squares. Pop this fudge in the freezer for about 15 minutes to let it harden up to make it easier to cut squares. If you notice it still a little bit difficult, just pop it back in for a little bit longer. I promise this fudge is AMAZING!

This would make a unique and delicious neighbor gift for the holidays :)

If the Almond Coconut Fudge is hard to cut into nice squares; line the baking dish with foil with an overlap on all four sides so that when it is cooled, you can lift it out and instead of using a knife to cut it try using a large pizza cutter and it should cut it nicely. I use a pizza cutter to cut sliced cheese stacked about 5 or 6 slices tall and it sure cuts it better than a knife.

I recommend using almond butter and omit the almond extract. It tastes really good. It came out really delicious, thanks a lot for sharing :)

I made this and although it was delicious, my coconut filling was not as thick as yours shown. What did I do wrong? Really want to make again so looking forward to reply. Thanks!

This looks delicious and I am saving it to my Pinterest board to make soon! If I have trouble cutting it, I will just use a small scoop and scoop it out into balls and put in a mini muffin cup! I can't rate the recipe yet because I haven't made it yet but the picture gets 5 stars!

large marshmallows - first there are miniature, then the "regular" sized, then the huge ones. Are we talking about "regular" sized, or the "huge" ones?
