Ice Cream Sandwich Cake

First off, I don’t know if you have noticed, but I have a new “Recipe Index” tab up at the top.  I figured it was about time I make an index for all these recipes on this blog.  Hopefully this helps you find specific recipes with more ease and maybe discover some you haven’t seen before!Today’s recipe that is both simple and delicious.  Aren’t those the best kind?  I shared it at Mandy’s Recipe Blog last week, but in case you missed it I am reposting it here!  I posted this a while back on my blog, but I thought it was time for an updated picture.  This recipe is one that comes from my grandma’s cookbook that she gives each grandchild when they graduate high school.  I have had mine for quite a few years now and am slowly picking out my favorites.  This happens to be one of them.  Every time I have made this for a party or an event with a lot of people, everyone always asks for this recipe.  It looks and tastes like you put in a lot of work, but believe me when I tell you it whips up SO quick!It only has 3 ingredients with an optional 4th ingredient!  It doesn’t get easier than that!Pin ItICE CREAM SANDWICH CAKEapproximately 22-24 ice cream sandwiches1 pint of butterscotch caramel ice cream topping12 oz. cool whipslivered almonds (optional)Unwrap and line bottom of 9″ x 13″ pan with approximately 11-12 ice cream sandwiches.  Trim to make layer smooth and even.  Spoon on and spread about 1/2 pint of butterscotch caramel ice cream topping.  Spoon on and spread half of the cool whip.  Repeat layers of ice cream sandwiches, butterscotch caramel topping, and cool whip.  Sprinkle top with slivered almonds.  Freeze until serving.Enjoy!Linking up to these parties and here

    This is actually a favorite summer dessert in our family that my mom makes! She layers it with toasted pecans and calls it a turtle ice cream cake! So glad to see you like it, too. :)This picture looks dreamy, btw!Merry ChristmasLeslie

    ooooo my friend made something like this before except some how she spiked it and added something like kalua in it. Crazy! That looks wonderful!
