Mini Pie Bites

I am always trying to think or come up with fun party finger foods that would be great for a variety of occasions…. bridal showers, baby showers, birthday parties…

People are always looking for the easy to get and eat foods.  

This recipe would definitely fit that description.

 These little pie bites are SO EASY to throw together and look so cute and gourmet!


I did a few different ones…Banana Cream Pie Bites


…Chocolate Mousse Pie Bites


….Coconut Cream Pie Bites


…and White Chocolate Strawberry Pie Bites


Using an already made pie crust dough (I love the Pillsbury brand) cut out shapes with a small cookie cutter and bake according to directions.  

Watch closely so they don’t over cook.

While Pie bites are cooling, prepare pie toppings



1 (3.9 oz) box instant chocolate pudding mix
1/2 cup water
1 (14 oz) can Sweetened Condensed Milk
1 (8 oz.) container Cool whip
1 cup chocolate chips, melted to smooth consistency

In a large bowl, mix chocolate pudding mix, water, and sweetened condensed milk.
Stir in melted chocolate chips.
Fold in 8 oz. container of cool whip until there are no streaks remaining.
Place filling into a piper with a large tip and pipe onto pie crusts.




1 (3.9 oz) box instant white chocolate pudding mix (can be substituted for coconut cream or banana cream as well)
1/2 cup water
1 (14 oz) can sweetened condensed milk
1 (8 oz) container Cool Whip
16 oz cream cheese, softened
1 tsp almond extract

In a large bowl, mix chocolate pudding mix, water, and sweetened condensed milk together.  
Fold in 8 ounces cool whip.  
Beat in cream cheese and almond extract.

Place filling into a piper with a large tip and pipe onto pie crusts.

Top pie crusts accordingly with strawberries and chocolate, bananas, coconut, whipped cream and mini chocolate chips.

    I made the chocolate recipe this past weekend for my Pinterest party and had some problems. Have any advice?-The crusts puffed up; even when pierced with a fork before baking-The filling was thin and would not hold its shape while piping.(even after refrigerating about 45 min)I made the best of it. I poked a hole in the tops of the puffed up crusts and filled anyway. They didn't look as nice as the ones pictured here but they tasted good.Thanks

    I don't know if you will read and reply to this but I wanted to know if you keep the in the refrigerator until you serve. I normally eat my pies warmed up but it doesn't seem like that would be the best option for this; am I right?

    We had a gender reveal party tonight to find out the sex of our baby in the making and I made these for one of the dessert....they were a huge hit!!! I used mini philodough shells for the pie crust though because I was running out of time to cut out and bake the dough! They were gone in no time and everyone commented on how amazing they were...they obviously had no idea how simple they were!!!! Thanks for this great recipe/idea!!     this did not turn out well AT ALL the recipe was not very clear and I made the chocolate ones and messed it up but im also making the banana ones so hopefully those turn out better, and when you put the cool whip mixture on the pie crusts it does not look so amazingly beautiful its more of a blob so I put the banana one in the freezer so maybe it being colder will help it keep its shape?

    These turned out very yummy! Everyone was wowed and thought I'd really gone to a LOT of work. I made the white chocolate, split the batch in half, and added melted semi-sweet chocolate to half. Two pie crusts made 50 bites, with more than half the pudding mix leftover.

    For the commenters who wound up with soupy mush - the whipped topping should be folded in LAST, never ever (ever) beat whipped topping into any recipe. Always fold in last.
