Apple Streusel Cake
I hope you all enjoyed my husband as the special guest writer yesterday. Hey throughly enjoyed it and told me he got a tiny real glimpse of why I LOVE blogging so much! Thanks for all your kind words about him! He was soaking it all in :) We might have to have him come around every once and a while!
School is getting back in session which means fall is right around the corner.
When I think of fall, I think of apples! I LOVE apples! I especially love to cook with apples. A kind lady in my neighborhood gave me this recipe so I decided to give it a try. I adapted it slightly and let me just say, this cake is absolutely fantastic! It is so easy to prepare and not only does it make your house smell AMAZING while its cooking, it tastes equally delicious! It is one of those semi-homemade recipes (my favorite kind) but no one would ever guess it :)
- 1 box dry yellow cake mix
- 2 large eggs
- ½ tsp. lemon extract
- 1 (21 oz) can apple pie filling
- ¼ cup butter, cold
- ½ cup brown sugar
- ½ cup flour
- ½ tsp. cinnamon
- Preheat oven to 350 degrees F
- Mix together cake mix, eggs, lemon extract and apple pie filling.
- Pour batter into a greased 9x13 baking pan.
- Prepare topping by combining brown sugar, flour and cinnamon in a small bowl. Cut in cold butter until crumbly. Sprinkle topping over the top of the batter.
- Bake at 350 degrees F for 35-40 minutes.
*Drool* I LOVE apples, and with fall on it's way, I'm starting to crave recipes like this one! This dessert looks incredible. I could have a piece right now with my coffee!!
Ooh, this looks delicious! I'll have to make it soon. I love apples and pumpkins and everything fall! I'm super excited for my favorite season, but I'm also extremely disappointed because I have no idea where my summer went! Ahhh!

I am SO eager for fall to get here that I want to get a head start on my fall baking and this looks like the perfect recipe to kick off the season! I LOVE apples also--when you lived in California, did you ever go to Apple Hill? It's in Northern California, by Placerville, but if not, it's this amazing series of farms that we travel to each year to pick out the prettiest apples, go on hay rides, get amazing cider, and of course, cakes and pies! This reminds me of Apple Hill and I can't wait to make it!

I love all kind of apple cakes or tarts, specially when we have cold days, yes, I'm in winter now, and you don't know how much I wish to have a warm portion of this and of course, a hot chocolate...!!!
OMG this looks amazing and the only cake mix I have in my pantry is a spice cake mix:( I think I will try and substitute it anyway as I have been having the apple cravings too and have everything else on hand. Fingers crossed!
BTW, I am a recent follower of your blog and LOVED your hubby's post. I think it helps to have a man's point of view--I have marked several of his faves to try out on my hubby!!!

I want to make this with fresh apples instead of apple pie filling, how many apples would i need and should i cook them before or just chop them up and add to the cake? looks delicious!
I also wanted to use fresh apples and found an apple pie filling recipe on allrecipes.com. The recipe yields enough for 5 pies so I just adjusted the ingredient amounts accordingly for one. All in all it turned out delicious!!
Just wanted to let you know. I happened on this from Pinterest (my addiction) and since I'm gluten free I had a g.f. cake mix and some leftover apples, I chopped the apples in my food processor, mixed with some cinnamon and sugar and incorporated them into the cake. I put in bundt pan and put streusel on top and baked. DELISH! Thanks for a great quick yummy dessert. Hubby really liked.
Sounds yummy. I have lots of apples from my CSA share, so I will find a way to use those instead of pie filling. Will also make it with a GF cake mix! Love your blog!
Made this yesterday. It came out fantastic. Had a last minute get together at my house and this was quick and easy to make. I ended up doubling the streusel topping (you can never have enough streusel topping!) I did like the ease of using the canned apple pie filling. I have other recipes where I need to peel and cut apples. I like this recipe since I can throw it together quickly. The only thing I would do differently the next time would be to cut up the canned apples into smaller pieces so they would distribute better. The canned apples I used had large slices of apples...I would just dice them up a bit. Otherwise, love the recipe and will use it again!!

Sounds delicious and super easy! Do you recommend it be served warm? If so, can you make ahead and simply pop in a warm oven for a few minutes, or would that dry it out?
