Waffle Brownie Cookies

When I was in Jr. High, I took a Home Ec. class. This was the first time I really ever made a recipe with myself. This was one of those recipes and it was obviously delicious enough to withstand the tests of time :)

These cookies are SO easy and fun to make! Kids love them because of their fun waffle shape. My mom would make these for after school snacks for us growing up. I make them when I need a quick chocolate fix! They really are super good!

Waffle Brownie Cookies
 
These cookies are soft, easy to make, delicious, and perfect for that chocolate craving.
Recipe type: Dessert
Serves: 3 dozen
Ingredients
  • ½ cup butter, softened
  • 1½ cups sugar
  • 4 eggs
  • 1 tsp. vanilla
  • ½ tsp. salt
  • ½ cup cocoa
  • 1¾ cup flour
FROSTING
  • ½ cup butter
  • ¼ cup milk
  • 2 Tbsp. cocoa
  • ½ tsp. vanilla
  • 2 cups powdered sugar, add more as needed to reach desired consistency
Instructions
  1. Spray waffle iron with cooking spray.
  2. Cream butter and sugar together in large mixing bowl.
  3. Add eggs and vanilla and beat well.
  4. Ad salt, cocoa and flour and mix until well combined.
  5. Place 4 teaspoons of batter onto each waffle quarter on waffle iron. Best if not using a belgium waffle maker because of the depth. Cookies will be super crispy.
  6. Cook 1 to 1½ minutes. DONT OVERCOOK. Time may vary depending on heat of the waffle iron. Take out carefully with fork and repeat with remaining batter.
TO MAKE FROSTING
  1. Melt butter and milk together in a microwave safe bowl until completely melted. Add vanilla, cocoa and powdered sugar and mix until smooth.

    Did you cut each individual square waffle with a cookie cutter afterwards? They view to be more "rounded" then square like the waffle iron.

    I'm thinking of baking these and shipping them off to son at college. Cut them down to the size of a mini cupcake foil older. Do you believe this should travel well w/o damage?

      no the brownie batter doesn't spread all the way out. It creates the circle-ish shapes itself :)

    These were great! I have 5 kids, and they were a huge hit for 4 of them! (One of my kids can't eat them because of egg allergies but he still enjoyed licking the frosting off the spoon!)

    I did make two changes to the recipe, but mostly just because of personal preference. I used 1/4 cup less flour than called for which created a tiny bit crispy on the outside, and light and airy on the inside texture. The other change was I added about 1/3 cup more powdered sugar to the frosting, I wanted a less buttery taste.

    I think this is an excellent recipe, and will definitely be kept with my collection of recipes to use from bloggers! Thank you for share!

    If you have not tried this.... DO IT!!!! It is awesome!!! They will come out soft if you stop them before the two minute mark.. at least they did for me... The kids loved them. The Grandkids thought this was the BEST way to make cookies. AMAZING idea and dince it was over 100 outside today, I got to make cookies and NOT heat up my kitchen.. YAY
