Chipotle Chicken Salad
I have another GREAT salad to share with you today! This one is one of my personal favorites because it brings to life the Mexican flavors that I love in the form of a refreshing salad! This recipe is so versatile in adding or subtracting what you do or don’t want.
Dig in! You are going to LOVE the flavor combinations!
Chipotle Chicken Salad
Ingredients
- 2 boneless skinless chicken breasts
- 4 Tablespoons chipotle seasoning
- 2 cups romaine lettuce
- 1/2 cup corn
- 1/2 cup black beans
- 1/4 cup shredded cheddar cheese
- 1/2 avocado sliced
Salsa Ranch
- 1/2 cup salsa
- 1/2 cup ranch dressing
- 1/4 cup tortilla chips crushed
Instructions
- Rub chicken with chipotle seasoning and cook on stove top or grill until cooked through. Once cooked, chop up and set aside.
- Place lettuce on a plate or bowl. Sprinkle with corn, black beans, and cheese. Place chicken and avocado slices on top.
- Top with Salsa Ranch and crushed chips!
- Refrigerate any leftover dressing for later use.

I have been seriously loving on chipotle flavor lately!!! Like so much that we have gone through at least 3 cans of the peppers. This salad looks so fresh and perfect for summer!!! Great flavor combo!!
