Ingredients
Crumb Topping
  • ½ cup flour
  • ¾ cup sugar
  • 1 teaspoon cinnamon
  • 6 Tablespoons butter
Cake
  • ½ cup butter, softened
  • ¾ cup sugar
  • ⅔ cup milk
  • 2 eggs
  • 3 cups flour
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup chopped green apples
Caramel Frosting
  • 4 Tablespoons butter
  • 1 cup brown sugar
  • 8 Tablespoons heavy cream
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
Instructions
Make crumb topping
  1. In a small bowl, combine flour, sugar and cinnamon and stir until well mixed. Cut in butter until crumbs are formed.
Cake
  1. Preheat oven to 400 degrees F.
  2. Spray a 9x13 baking dish with cooking spray.
  3. In a large mixing bowl, cream butter and sugar. Add milk and eggs and beat again. Add flour, baking powder and salt and stir until just combined. Batter will be thick. Fold in apples.
  4. Spread ½ of the batter on the bottom of baking dish.
  5. Layer ½ of the crumb topping over batter.
  6. Carefully spread the rest of the batter over the top of crumb topping.
  7. Sprinkle the remaining crumb topping over the top of the coffee cake.
  8. Bake for 25 to 30 minutes at 400 degrees F until tooth pick comes out clean.
  9. Drizzle frosting over the top.
Caramel Frosting
  1. Melt butter in a sauce pan over medium heat. Add heavy cream and brown sugar and stir until it begins to boil. Remove form heat and add in 1 cup powdered sugar. Cool slightly and add vanilla and remaining cup of powdered sugar. Add in milk if needed to thin frosting or more powdered sugar to thicken.

    This was inedible. You can taste the baking soda (should probably be tsp instead of Tbsp) and it was very dry. Too bad, the concept is great.

      I am so sorry you had a bad experience with this. It was supposed to be baking powder not soda and was a typo on my part. I also lowered the amount down to 1 tablespoon instead of 2 tablespoons. Hopefully that will help and so sorry for your troubles.

    I made this yesterday. I knew it was Baking Powder as per the other ingredients. I was truly disappointed with the results. I found it very time consuming and very frustrating to incorporate the apples as the batter was so thick. It was like trying to spread cookie dough into the pan.
    . The results were a very heavy and dry cake.

    Very good - the batter is really really stiff, so had to drop by spoonfuls into pan. Caramel icing is to die for - and would be good on any chocolate cake!

    Hi Nikki, Thanks for the very yummy recipe. I just baked it today. Aside from the original caramel glaze , i added a left over cream cheese on top.
