Orange Creamsicle Sheet Cake

Ingredients
Cake
  • 2 cups flour
  • 2 cups sugar
  • ½ cup butter
  • ½ cup shortening
  • 1 cup water
  • ½ cup buttermilk
  • ½ teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 Tablespoons orange zest
  • 2 teaspoons orange extract
  • a couple drops of orange food coloring, optional
Cream Frosting
  • ¼ cup butter, softened
  • 4 cups powdered sugar
  • 1 cup whipping cream
  • ¼ teaspoon salt
Instructions
  1. In a large mixing bowl measure flour and sugar. Set aside. In a medium sauce pan, or microwavable bowl bring butter, shortening, and water to a boil. After mixture reaches a boil, add it to the four mixture and stir to combine. Add buttermilk, then baking soda, then eggs, then vanilla, orange extract and orange zest, in that order, mixing in between each addition. If desired, add in a couple drops of orange food coloring and stir in.
  2. Pour into a greased jelly roll pan and bake at 400 degrees F for 20 minutes.
Frosting
  1. In a medium size bowl, combine butter, powdered sugar and mix on low. Add whipping cream and salt and beat until creamy. Spread over cooled cake.

    The lis of ingredients does not include vanilla, yet the instructions mention vanilla. How much vanilla?

      Most cakes use 2 tsp.vanilla...that's what i'd add to the batter :)

    This looks perfect for a summer dessert. Just a couple of questions......What are the measurements of your jelly roll pan? Also, as somone else mentioned, there is vanilla in the instructions but it is not listed in the ingredients.

    I made the cake without getting reply regarding vanilla content. I added 1 tsp also my cake was not the beautiful orange color as shown

    Hi I made this cake last week with a few changes. I added 1 cup melted butter instead of half butter & half shorting as I don't like to use shorting. I added 1 cup of fresh squeezed orange juice instead of the water. And used orange baking emulsions instead of the extract. And added 1 tsp of vanilla. I put the flour and sugar in the stand mixer and then added the melted butter and orange juice and mixed just until combined. Then added each ingredient as listed and mixed just until combined ... scrape down bowl a few times in between adding items, specially if using stand mixer .. do not over mix. I baked cake in a 9 x 13 greased pan @ 350 for around 30 mins .. you can test cake around 25 mins and if it need more time continue to bake until done. The cake turned out super moist, nice orange color and great orange flavor .. will definitely make again .. and maybe even change out the flavors for lemon or lime or even key lime .. I'm sure they would all be wonderful.

    Hi. There are 2 mistakes in recipe One is you omitted vanilla amount; I'll use 1tsp. . That bothers me but I'm going to try it anyway. Will let you know how we like it.

    I was expecting the actual cake to have a stronger orange flavor, but it is very subtle. This wouldn't be a problem if the flavor of the icing wasn't so sickeningly sweet. The excessive amount of powder sugar overpowered all of the other flavors. It was all I could taste, even with just a thin layer. Next time I will try upping the amount of orange zest or extract and I will also cut down on the amount of powder sugar. The cake itself baked up nicely and had a nice moist crumb, but again this could use some adjustments. The flavors are unbalanced.

    It would also be a good idea to half the icing recipe as I had excess.
