Slow Cooker Fiesta Ranch Chicken

I adore Slow Cooker recipes. Especially when we have been having obscene amounts of rain like we have the past 3 weeks. There is nothing more cozy to me on days like these than when my house smells delicious all day long from whatever is cooking in the slow cooker.

This recipe I got from my sister who has been using it for years. It is her go to recipe because she always has the ingredients on hand and it is approved by even the pickiest of eaters.

This chicken is phenomenal in almost any Mexican meal. My sister loves to simply put some on top of some brown rice. However you chose to eat it, know that it is completely universal and one of the easiest slow cooker chicken recipes you will ever find! Not only is it fast and easy, but it is BEYOND flavorful and delicious!

Ingredients
  • 4 large chicken breasts
  • 1 package ranch mix
  • 1 package taco mix
  • 2 cups chicken broth
Instructions
  1. Spray slow cooker with cooking spray and place chicken on the bottom.
  2. Add ranch mix, taco mix, and chicken broth.
  3. Cover and cook on LOW for 4 to 6 hours or until chicken is cooked through.
  4. Shred chicken with a fork and serve over brown rice or in a taco.

    I have very little imagination when it comes to food. Can you give me a few other ways to use this? The only other way I can think of is enchiladas.

      Enchiladas would be fabulous. I can see using this in tacos, tostadas, in burritos, or as chimichanga filling, and in salad. A Southwestern style salad with black beans, corn, tortilla strips, lettuce (maybe baby spinach too), tomatoes, bell peppers, whatever veggies you enjoy in a salad would be delicious.

    I made this tonight and it didnt come out anything like that picture and I followed the directions to a T...its watery and tastes like regular chicken.
    I used frozen chicken and threw it all in there together to cook on low for 6 hours...did that make a difference?

      What kind of chicken broth did you use? I bet that makes a difference...the better the chicken broth, the better the dish! But also, you could try substituting a 2 cups of salsa for the chicken broth. I would just use a not-so-chunky brand because you really need the liquid....something like Pace Picante. Also, I cook mine more like 8 hours on low so more of the liquid is gone. Try just decreasing your liquid a little (maybe by 1/2 cup) if you use frozen chicken.

    This looks delicious! Just to make sure because I haven't cooked a lot of Crock-Pot recipes, are you placing raw chicken at room temperature into the Crock-Pot at the beginning?

      Instead of the taco mix you can use your own seasonings you have on hand. (ex. thyme,cumin, chili powder, s&p) This is what I use instead of taco packet.

    Immediately after cooking, the chicken was bland and tasteless. I shredded it and replaced it in the juices in the crock pot and let it cook on low for another hour. The seasonings were a little stronger after that, but I had cooked about 5 pounds of chicken with as much seasoning as I normally use for 1 pound of meat. I did not have high hopes for the dish.
    We ate dinner, the chicken over white rice with sides of green beans and fresh persimmons, but even my "food purist" child thought it was too bland. We thought it tasted better topped with ranch dressing instead of spicy ranch, salsa ranch, sweet chili sauce, salsa, ketchup, BBQ ranch, or tomato jam.
    After sitting in the juices for another couple hours, the flavors finally permeated the meat. Unfortunately, we did not care for the flavor. It would have benefitted from some onion and garlic and green bell peppers.
    I have a lot of meat left, so I will use it in a King Ranch Chicken Casserole and Brazilian pastels, but I won't be making this again.
