Pistachio Pudding Cookies

I am thrilled to have Aimee from Shugary Sweets here visiting today. Aimee has some amazing recipes on her blog! I always get so excited to see what she is baking up and posting. We have become friends through this whole crazy blogging experience and I can’t wait to meet her someday! I’ll let her take it away now :)


Hey Chef in Training friends! I’m so excited to be posting here on Nikki’s blog today! I have been following her since I started blogging, so it’s been fun to watch how much she has grown, and become friends with her through this blogging community!

My name is Aimee and you can find me over at Shugary Sweets. I tend to share my over indulgence in all things sweet, with the occasional snack or dinner idea thrown in!

When Nikki asked for us to share a cookie recipe, I thought it only fitting to share a pudding cookie recipe. After all, she is the pudding cookie queen! I’ve only begun making this type of cookie, but it’s clearly so versatile when you think about all the options available!

And the pudding keeps these cookies soft, forever…or until the last one gets eaten!

I added some Craisins and White Chocolate chips to mine, because I can. Red, White and Green screams Christmas to me!

Pistachio Pudding Cookie Recipe:

1 cup unsalted butter, softened
1 cup light brown sugar 
1 box (3.4oz) pistachio instant pudding mix 
2 eggs 
1 tsp vanilla extract 
2 1/4 cup all purpose flour 
1 tsp baking soda 
1/2 tsp kosher salt 
1 cup dried cranberries (craisins) 
2 cup white chocolate morsels 
1/3 cup pistachios, shells removed and chopped

Beat butter and brown sugar until creamy. 
Mix in the pudding mix, eggs and vanilla extract. 
Add flour, baking soda and salt, mix until combined. 
Fold in cranberries, white chocolate and nuts. 
Drop by tablespoon onto a parchment paper lined baking sheet. 
Bake in a 350 degree oven for 11-13 minutes.

Makes 40 cookies.

    I made these tonight and must say they are so good. My family doesn’t care for craisins and I didn’t have any pistachio’s so I left them out and added simi sweet chocolate chips. They were easy and delicious. Thanks for posting this recipe!
