Creamy Cucumber Dressing

Last week, I guest posted on my cute friends’ blog, eighteen25 sharing one of my favorite summer recipes.  If you haven’t checked out their amazing blog, be sure and do so! You are going to love it!  Those 3 girls are SO talented :)

When I think of summer, I think of all the delicious produce that is in season.  I love finding new ways to involve them in my recipes.  Since summer is quite hot, I avoid turning on my oven as much as I can.  Usually for lunch, I like to sit down to a delicious and fresh salad.  Salads are extremely basic, so I like to change up the flavors so that it feels like a new recipe every time I sit down to the table.

This dressing is the perfect topping to a fresh salad!  I absolutely LOVE it and know your will, too!

Creamy Cucumber Dressing

Creamy Cucumber Dressing!  This is so easy to make and is a fun and fresh flavor for salads!

    A fun, fresh and delicious way to dress up a salad!

    Ingredients

    Instructions

    1. Halve cucumber lengthwise, remove seeds and cut into small pieces.
    2. Place cucumber pieces, sour cream, lemon juice, sugar and salt into blender and blend until smooth and creamy.
    3. Refrigerate until ready to use. Store any left over dressing in fridge.

    Enjoy!

      Thank you so much for the amazingly yummy recipes you always share with us! I’m excited to try this recipe and I have a question for you. If I omit the sugar from this recipe will it dramatically alter the flavor? It’s not a lot of sugar so I’ll leave it be if necessary, but, if I can omit it without really altering the flavor I’d like to. Thanks again for all of your sharing ;)
