I've tried so many copycat for Chipotle's Cilantro Lime Rice but they've all turned out horrible – I look forward to trying this one (love the addition of cumin!) even though I've never heard of Cafe Rio. The rice looks delicious! :)

    Mrs. Metro says:

I made this in my rice cooker. The lime was so infused when I put all the ingredients in my rice cooker to cook, that when I made that all we could taste was lime. For those who love the rice cooker, wait to add the lime until you serve it and be conservative when adding it to your ride.
