No-Bake Cheesecake

This summer heat is pretty intense- at least for me. I am a whimp with heat though. I am the kind of girl that can’t even sleep with sheets on most nights because I feel like a furnace. Turning my oven on in the summer, as you can probably imagine, is one of the last things I want to do.

My mom introduced me to this cheesecake, along with other versions of it, years ago. Check out Easy Chocolate Cheesecake for that particular recipe. It is still a go to recipe when I need a dessert without the heat and without the hassle. It is super simple, whips up in minutes, and tastes really good. Granted, its not exactly like real cheesecake, but in a crunch, it does the trick! We love it and I know you will, too!

No-Bake Cheesecake from chef-in-training.com ...The perfect, simple and easy dessert! It seriously whips up in minutes and requires no oven!

Enjoy!

I love it! I always hate turning on my oven in the summer, because it heats my house up so bad. I usually try to stick to the grill for dinner, and a no bake cheesecake...win-win!

Mix a little lime curd in and bam! Instant lime cheesecake. Like summer in a pie pan! I love no bake cheesecakes!

Here in the South, we call this icebox pie. An old summer standby.

Is it necessary to add lemon juice? I know this might be a rather silly question!! Thanks!!!!!! :))

I have a question about this recipe. When I tried it, the cheesecake never set! It just ended up being like a cheesecake "dip" sitting inside a crust.

I've googled it and while this recipe seems to pop up a lot, there's no mention of that! What am I doing wrong?

I had the same problem! You're not the only one. This recipe calls for way too much sweetened condensed milk!! Next time I'm only adding a little and more cream cheese (as it should be) because it's called cheesecake for a reason...so just try adding less sweetened condensed milk and a little more cream cheese then it should turn out better.
