Just when it was starting to feel like spring where I live, it went and dumped over a foot of snow with more projected to come this weekend. Now we are back to winter jackets, snow boots and figuring out how to keep warm. On cold days, soup and chili are my go to meals. I have a delicious Cowboy Chili recipe on the blog, but this one takes the cake for my new favorite!

This chili is special. My dad recently got a Traeger Grill this past year and has since orchestrated his fair share of family dinners. You don’t have to ask me twice to pack up my family of 6 and head to where the Traeger is doing its magic. Seriously, if you have not experienced meat cooked in a smoker, you are SEVERELY missing out. I was never a huge meat fan, that is until I experienced meat cooked on in a smoker. It is tender and unbelievably juicy and perfect.

We simply just seasoned the steak with salt and pepper and let the smoker give it that heightened smokey flavor. You could also grill your meat on a traditional grill if you don’t have a wood pellet grill.

Don’t be alarmed by that pink color! I assure you, this steak is cooked to my liking (and I am really picky about the doneness of my meat, I can’t handle anything more than medium. When you cook meat on a wood pellet grill, it creates a pink ring around your meat about 8-10 millimeters deep simply by the way it cooks it. I remember when my father in law first introduced me to wood pellet grilled meat and I was freaking out because it was pink! Come to find out- its 100% normal with smoked meat.

HOW LONG DOES IT TAKE TO GRILL A STEAK IN A WOOD PELLET GRILL?

We actually learned how to cook steak from Traeger’s website. They recommend to “leave your grill on smoke and give your steaks 25-30 minutes (for sure at least 15 minutes) to really take on some delicious smoke flavor. After that, remove the steaks from the grill and turn up the temperature to “High” and let your grill preheat for 10-15 minutes. You want your grill to be running at the highest possible temperature. Return the steaks to the hot grill and cook to desired doneness.” For this recipe I prefer medium well.

My dad got this recipe from a church buddy of his and ever since then this chili has been a staple in my entire family’s homes. It is SO delicious and hearty. It not only has steak but ground beef and beans galore.

Ingredients
  • 1 pound ground beef
  • 1 pound tri tip steak, or New York strip steak
  • 15 ounce can red kidney beans, drained
  • 15 ounce can black beans, drained
  • 15 ounce can white beans, drained
  • 15 ounce tomato sauce
  • 1 bottle Catalina fat free dressing
  • ¼ cup chili powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne pepper
Instructions
  1. Season steak with salt and pepper and rub into meat.
  2. Grill steak on the barbeque or smoke in your wood pellet grill to medium well. Let steak rest for 10 minutes, and then cut into bite size pieces.
  3. In a large pot, cook ground beef and drain.
  4. Add kidney beans, black beans, white beans, tomato sauce, Catalina dressing, chili power, salt, pepper, and cayenne pepper, and steak.
  5. Taste and add more chili powder and salt to your liking.
  6. Bring to a boil and reduce heat to low and cook for 20 minutes.
