Six Layer Cookie S’mores Bars and “Peaunt Butter Comfort” Review

Who here loves peanut butter?… let me rephrase that question… Who the heck doesn’t love peanut butter?! :)

Most everyone I know loves the creamy (or crunchy) stick-to-the-roof-of-your-mouth goodness. If this is you, then you are going to want to listen up to today’s post because it involves Peanut Butter.

One of my darling blog friends, Averie from Averie Cooks, recently released a cookbook titled, “Peanut Butter Comfort“. This cookbook is phenomenal. If you have been to Averie’s blog, you know that the photos, recipes and writing are all equally amazing. I was honored when she asked if I would do a review for her cookbook. I knew that her cookbook would be something special because that is exactly what her blog is.

Peanut Butter Comfort is filled with a wide assortment of recipes containing peanut butter. From dips to breakfasts and of course- desserts, this cookbook has all your peanut butter needs and cravings covered. If you love peanut butter then you NEED to get your hands on this cookbook. You will be in awe of how many creative and delicious ways there are to enjoy America’s favorite spread.

As I was flipping through the pages, I found it extremely difficult to pick what I wanted to try first. Every picture is mouthwatering and every description made me want to make them that much more. Finally, I settled on these delicious “Six Layer Cookie and Marshmallow S’mores Sandwich Bars”. Cookies+S’mores+Peanut Butter=a winning recipe for anyone.

These 6 Layer Bars are more like tall and thick towers of scrumptiousness. They are rich but worth every single calorie. Honestly, it was love at first bite for me. Averie provides a couple options for this recipe. You can make her cookie dough in the recipe or use two 16 oz. packages of refrigerated cookie dough. Because I was racing for time on this particular day, I opted for the refrigerated cookie dough, which made this recipe EASY PEASY! It whips up quicker that you can count the six layers of this dessert… okay, it takes longer than six seconds, but 5 minutes?! That is crazy easy and doable in my book :)

Remember, you can easily replace the refrigerated cookie dough with homemade cookie dough (The one in Averie’s cookbook sounds absolutely wonderful as it uses both semi-sweet and white chocolate chips). I was crunched for time so I took the easy way :)

    Wonderful review of Averie's Book, Nikki! I love every single recipe and Kevin has got me getting lost in it a few times - hardly paying attention to anything else besides the gorgeous photography and helpful explanations and text. Love these bars! s'mores + peanut butter are such a fab combo.

      Yes, you can. Averie provided both as an option within her recipe. Her homemade cookie dough recipe uses both semi-sweet and white chocolate chips giving it an extra ounce of wonderful :) I was just super crunched for time on this particular day, so I opted for the refrigerated cookie dough.

    I am so glad you tried these and made them. I remember making this particular recipe very, very well. The pan weighed about 4 lbs going into the oven from those 6 layers - but as you said, worth it :) I hope your kiddos enjoyed them, too!

    I don't know why most people eat smores without peanut butter - it is SO good. I like how simple this is with the refrigerated cookie dough:) That cookbook is on my birthday wishlist! Wonderful review and now even more motivated to get it!

    We made these last night and they were seriously so freakin yummy! We used the chocolate chip pudding cookie recipe for the cookie dough. It was heavenly. Thanks for all your recipes. A lot of my go to meals are from you and it's made being a Mom soooo much easier! ;)
