Oatmeal Creme Pie Cookies

We went to visit my family recently and my mom had made these amazing Oatmeal Creme Pie Cookies. I couldn’t get enough of them! I am a huge fan of the Little Debbie Creme Pies, and while these didn’t taste quite like them (I’ll hunt down and try to create the perfect adaption of those one day) they were still incredible!

The Marshmallow Creme Frosting Filling is ridiculously good. It has a thicker-gooier texture than most frostings and really knocks these cookies out of the park! Try them to see for yourself!

Ingredients
Cookies
  • 1 cup butter, softened
  • ¾ cup brown sugar
  • ½ cup sugar
  • 1 Tablespoon molasses
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups oats
Creme Frosting Filling
  • ⅓ cup butter, softened
  • ½ cup marshmallow creme
  • 1 teaspoon vanilla
  • 3-4 tablespoons milk, more or less depending on thickness preference
  • 3 cups powdered sugar, more or less depending on thickness preference
Instructions
Cookies
  1. Preheat oven to 350 degrees F.
  2. Grease cookie sheet and set aside.
  3. Cream butter, sugar and molasses in a large mixing bowl. Add vanilla and eggs and beat again. Add flour, salt, baking soda and oats and mix until well combined. Don't over beat.
  4. Drop tablespoon spoonfuls of cookie dough onto prepared cookie sheet.
  5. Bake 10-12 minutes at 350 degrees F.
  6. While cookies are cooling, make frosting.
Creme Frosting Filling
  1. Cream butter and marshmallow creme together in a large mixing bowl.
  2. Add vanilla, milk and powdered sugar and beat until smooth. Add more milk and/or powdered sugar as needed until desired frosting filling consistency is achieved.
  3. Once cookies are cooled, frost the bottom half of one cook and top it with the bottom half of another to make a creme pies. Repeat with all cookies.
