Hi! It’s Maria from Two Peas and Their Pod. When Nikki asked me if I wanted to do a guest post about cookies, I jumped at the chance. I love Nikki and her recipes…and I LOVE cookies. I have an obsession…maybe it’s an addiction. Cookies are my favorite thing to create, bake, and eat. Earlier this year, we came out with a book all about cookies, Cookie Cravings. And later this month we will be announcing a Holiday Cookie Cravings, so stay tuned. C is for Cookies! Yay! 
 
Cookies make the world a better place, especially during the holiday season. I love turning on the Christmas tunes and baking up a storm. Every year we bake up our favorite cookie recipes-Soft GingersnapsRed Velvet Cheesecake CookiesChocolate Mint Chip Cookies, andCinnadoodles. I always like to add a few new cookies to the mix every year. This year these Cinnamon Toffee Pecan Oatmeal Cookies are on the list. I love these cookies and I think our neighbors, friends, and family will too! 
 
I love a cookie with lots of mix-ins and these oatmeal cookies are loaded with cinnamon chips, toffee, and pecans. They are chewy, crunchy, crisp around the edges, and soft in the middle. These cookies have it all!

Cinnamon Toffee Pecan Oatmeal Cookies

1/2 cup unsalted butter, at room temperature
1/2 cup light brown sugar
1/2 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/4 cup old fashioned oats
1 cup cinnamon chips
1/2 cup Heath Bits ‘O Brickle Toffee Bits
3/4 cup chopped pecans

1. Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.

2. In the bowl of a stand mixer, cream butter and sugars together until smooth. Add the egg and vanilla extract and mix until well combined.

3. In a separate bowl whisk together flour, baking powder, baking soda, salt, and cinnamon. Slowly add flour mixture to the wet ingredients. Mix until just incorporated.

4. Stir in the oats, cinnamon chips, toffee bits, and pecans.  Make dough balls-about 1 tablespoon of dough per cookie.  Bake cookies for 10 minutes, or until the cookies are golden brown around the edges, but still soft in the center. Remove from oven and let cool on baking sheet for two minutes. Transfer to a wire rack to finish cooling.

  1. Yum, yum! I’m a big fan of cinnamon chips in oatmeal cookies but I’ve never thought of pairing cinnamon chips with toffee chips. I’ll have to try it!
