Broccoli Cheddar Soup

I LOVE Broccoli Cheddar Soup.  My mom made this soup all the time during the fall and winter seasons growing up, and now I make it for my family.  It is so delicious and comforting on a colder day!

and you can find the homemade bread bowl recipe here :)

Broccoli Cheddar Soup

Author:
Ingredients
  • ½ cup butter
  • ½ cup flour
  • 2 cups water
  • 2 cups heavy cream
  • 4 cups chicken broth
  • 1 (16 oz) package frozen chopped broccoli (you can add more if you like)
  • Salt and Pepper TT
  • 8 oz. Velveeta Cheese, or you can sub 1 cup shredded cheddar cheese
  • 1 (8 oz) bag sharp cheddar cheese
Instructions
  1. Mix water and heavy cream together and set aside.
  2. Melt butter and flour together to form a roux. Slowly add in heavy cream/water mixture stirring constantly. Add in chicken broth still stirring. Let simmer for 20-25 minutes to let the soup thicken up.
  3. Add in broccoli and cook over low heat for an additional 20-25 minutes to continue to thicken soup as well as cook and soften the broccoli.
  4. Sample and add salt and pepper to taste.
  5. Cut 8 oz. Velveeta into cubes and drop into soup and stir until melted. Add in sharp cheddar and stir until blended.

Enjoy!

  14. Nicole

I made the Broccoli Cheddar Soup today, and mine came out rather soupy. It is not thick by any means ! And not really cheesy. Any suggestions ??

  15. Tracie

Best Broc & Cheese soup I have had and it was super easy to make!

  16. grace

Do you have to use velveeta? Can I sub a different cheese? Just wondering - not a big velveeta person at all.

  17. Krista

Broccoli cheese soup is my all time favorite soup, and Panera Bread makes it hard for anyone to complete. But I must say, this recipe has proved to be just as good as Panera's soup!! Thanks for sharing this incredible recipe-it made for a wonderful raining evening in your homemade bread bowls!

Love Panera's and they add some shredded carrots and a little cauliflower. Which I will do with this recipe.

  18. Jane

The broccoli soup was delicious! Tried the same base and added frozen hash browns instead of broccoli - it was a hit too.

  19. Veronica

This was very good in homemade bread bowls. I made it with 12oz evaporated milk and 6.5 cups vegetable broth for the liquids (instead of the cream, water, and chicken broth). I also used 20 oz of fresh broccoli instead of the frozen. Thank you for the recipe!

  20. Vanessa

Is there anything to substitute for the Velveeta? Would you just double the cheddar? Add a little extra milk?

  21. Catherine

    Does this freeze well??

  22. Linda Anderson

    sounds wonderful!!!!

  23. Crystal

Can this is frozen and reheated?

  24. Emily @ A Very Sweet Life

Any tips on substituting something else for Velveeta? I just can't bring myself to use that stuff but your soup looks so good!

  25. geni

That sounds delicious! I love broccoli-cheddar soup. How many servings does this recipe make? Thanks.

This looks yummy! Do you by chance have the recipe for the bread bowl too? I've been looking for a good bread bowl recipe. Thanks for sharing the soup.

    God's Blessings

You included the recipe for the soup but omitted what you put the soup in. It is not a bowl is it a loaf of bread that you made a hole in and put the soup in there and if so what kind of bread will hold the liquid soup without it oozing through.

  28. DENISE TOPPING

FOR THOSE OF YOU WHO DON'T PREFER TO USE VELVEETA, I USE RAGU CHEDDAR SAUCE AND SHREDDED CHEDDAR CHEESE.

    1. Kay-M

I love the Rago Cheddar Sauce too, but to be totally honest - I don't think it is any better for you than using Velveeta :(

Sounds delicious and easy. I cannot wait to make this a fall/wintery tradition with my family. What is heavy cream?

  30. DonnaMaree Austin

What could you suggest to use instead of Velveeta cheese which is not available in my country

  31. christina whiting

Do you have a recipe for the bread bowls I have never made homemade bread, but broc-cheese soup in a bread bowl is one of my favorite take-out lunches. Would love to be able to do it at home.

    Thanks!

Has anyone tried this using a gluten free flour? If so, did it turn out good and what kind/brand of GF flour did you use? I want to make this for my Hubby, but he has to do gluten free because he has Celiac.

    1. Ann

My grandson son has Celiacs and I use corn starch!

  33. Kelly

What is the serving size for this recipe? I have a family of 7, 5 of them being boys. ;)

This was delicious. I added 2 bags of broccoli ( my daughter LOVES broccoli) used my potato masher to "mash" broccoli up a little. My tummy hurt so bad after eating because I ate so much, even had some for breakfast. Lol. Nice job on this one, will make again and again. :)

I love your recipes, I just wish you had nutritional facts, serving size etc it is hard to break down, both my spouse and I are diabetics this would be good without the bread bowl, but it would nice with carb and calorie count

I have made this for my family and it is amazing!! I loved it so much I made it again two days later and took it to work with me. My coworkers loved it! I printed the recipe out for seven coworkers. I work in an emergency room and a lot of times we don't get a lunch on our 12 hour shifts. It's a huge hit this recipe. Thanks for sharing!

Very good soup. I always follow original recipe before or if I make changes, i'm glad for that because the velveta makes a wonderful silky texture & thickening agent. You do not taste velveta as the broccoli and sharp cheddar is at the forefront.
I love having good basic recipes, I thank you for this one.
Sourdough is one soup bowl that doesn't leak, but hard to find in some places.

I love this! For a hearty, mid-winter's main course, add shredded turkey or chicken

  47. Audrey

Can someone tell me how many servings this makes? Thanks

  48. Kitchen Kid

Your recipe doesn't provide a serving yield. How many and what size servings does this recipe make?
