I am all about quick dinners, especially when those dinners are healthy, too! We really enjoyed this meal!
It is also a weight watchers recipe, so who wouldn't love that?!
BUBBLE UP ENCHILADAS

Nutrition Info: Calories 390 | Fat 11.5g | Carbohydrate 36g | Fiber 2g | Protein 33g
Serves 6

Weight Watcher Recipes 6 points (old points)
- 1 pound ground turkey
- 1 (10 ounce) can enchilada sauce
- 1 (8 ounce) can tomato sauce
- 1 can reduced fat refrigerator biscuits
- 1 ¼ cups shredded low fat Mexican Cheese
Preheat oven to 350 F
Brown Turkey and drain juices if needed
Pour and mix enchilada and tomato sauce over browned turkey.
Cut refrigerated biscuits into fourths and stir into meat mixture.
Dump into a greased 9X13 casserole pan and bake for 25 minutes.
Take out of oven and sprinkle cheese on top. Bake for an additional 10 minutes.
Let stand for 5 minutes.

ReplyDeleteI made this the other night and it turned out great! I used a 9X13 pan, and cut the biscuits into smaller pieces because I thought the chunks in 4ths were too big. I managed to get about 10 servings from it, but more like 8 if you went back for seconds. I am definitely making it again in the future!

ReplyDeleteHi! This inspired me to make a version using whatever I had in -I made 2-person serving using chopped, pre-cooked chicken breast, salsa and 1/4 recipe homemade buttermilk scones w cornmeal added. A completely different creature, but very nice!

ReplyDeleteI tried making this the other night and the biscuits that were mixed in didn't cook and were a totally doughy mess. The ones towards the top were ok. Did I do something wrong? Were the biscuits supposed to be pre-cooked?

ReplyDeleteI have made this twice now... the biscuits cooked all the way through for me, I used the reduced fat wheat ones... maybe you didn't cook it long enough?! I would look at the time on whichever kind of biscuits you buy and make sure they are cooking at least 1.5x that length!

ReplyDeleteJust made these and added a bag of frozen Mexican veggies (corn, beans, onions, etc.) for more volume, and only a few extra points. I also only used 5 of the 8 biscuits in the can, and that was definitely plenty. It cut the points plus value down to 9 per serving. I made six large servings. These don't taste very much like enchiladas, but it is a tasty recipe!

Only used 6 of 8 biscuits and added 1/2 cup of chopped red onion, 1 whole green pepper chopped, 3 Tbsp of Sriracha, 1 can of diced roasted tomatoes and used one whole large grilled chicken breast instead of turkey. Not sure about the correct translation of WW Points but it is DELISH!

I used shredded chicken breast in place of the ground turkey, and fresh salsa in place of the tomato sauce. Also added a few jalapeno slices. It was delicious!!

ReplyDeleteFound this through Pinterest- & made it tonight (added onions & taco seasoning to the meat). It was absolutely AMAZING--- worth EVERY single one of the Weight Watchers Points (10 points plus.) You get a gigantic amount of food in one serving. Definitely a new favorite. Thanks!
ReplyDeleteI just made this recipe tonight and my family loved it! I used whole wheat reduced fat refrigerator biscuits, black pepper, and added 1 onion and fresh spinach. I cooked the onion with the turkey and added the spinach at the end of the cooking time for the turkey until it was just wilted. I will definitely make this again! Yummy! Thank you!
