Bubble Up Enchiladas

I am all about quick dinners, especially when those dinners are healthy, too! We really enjoyed this meal!
It is also a weight watchers recipe, so who wouldn’t love that?!

Bubble Up Enchiladas

Prep Time 15 minutes
Cook Time 35 minutes
Servings 6
Calories 459kcal

Ingredients 

  • 1 pound ground turkey
  • 10 ounces enchilada sauce
  • 8 ounces tomato sauce
  • 1 can reduced fat refrigerator biscuits
  • 1 1/4 cups shredded low fat Mexican Cheese

Instructions

  • Preheat oven to 350 degrees F
  • Brown turkey and drain juices.
  • Pour enchilada sauce and tomato sauce over browned turkey and stir to evenly coat.
  • Cut refrigerated biscuits into fourths (cut in half and then each half in half) and stir into meat mixture.
  • Dump into a greased 9x13 inch baking pan and bake for 25 minutes or until dough is cooked through.
  • Take out of oven and sprinkle cheese on top. Bake for an additional 10 minutes or until cheese is melted.
  • Let stand for 5 minutes

    I made this the other night and it turned out great! I used a 9X13 pan, and cut the biscuits into smaller pieces because I thought the chunks in 4ths were too big. I managed to get about 10 servings from it, but more like 8 if you went back for seconds. I am definitely making it again in the future!

    I tried making this the other night and the biscuits that were mixed in didn't cook and were a totally doughy mess. The ones towards the top were ok. Did I do something wrong? Were the biscuits supposed to be pre-cooked?

    I have made this twice now... the biscuits cooked all the way through for me, I used the reduced fat wheat ones... maybe you didn't cook it long enough?! I would look at the time on whichever kind of biscuits you buy and make sure they are cooking at least 1.5x that length!

    Just made these and added a bag of frozen Mexican veggies (corn, beans, onions, etc.) for more volume, and only a few extra points. I also only used 5 of the 8 biscuits in the can, and that was definitely plenty. It cut the points plus value down to 9 per serving. I made six large servings. These don't taste very much like enchiladas, but it is a tasty recipe!

    Just made. Only used 6 of 8 biscuits and added 1/2 cup of chopped red onion, 1 whole green pepper chopped, 3 Tbsp of Sriracha, 1 can of diced roasted tomatoes and used one whole large grilled chicken breast instead of turkey. Not sure about the correct translation of WW Points but it is DELISH!

    Found this through Pinterest- & made it tonight (added onions & taco seasoning to the meat). It was absolutely AMAZING--- worth EVERY single one of the Weight Watchers Points (10 points plus.) You get a gigantic amount of food in one serving. Definitely a new favorite. Thanks!

    I just made this recipe tonight and my family loved it! I used whole wheat reduced fat refrigerator biscuits, black pepper, and added 1 onion and fresh spinach. I cooked the onion with the turkey and added the spinach at the end of the cooking time for the turkey until it was just wilted. I will definitely make this again! Yummy! Thank you!

    I made this last night. It went over well with the kids. My small town grocery store didn't carry reduced fat biscuits, so I just bought another kind. It would've been helpful to know what oz. size can to use. I used a 10 oz can and it turned out well, but I may use a Grands size next time, because the picture looks puffier than mine. Quick and easy weeknight meal!

    There are people who don't cook in the "traditional french method" as Escoffier would promote. I think this recipe was geared toward the easy weeknight meal for busy families...also if it would be weight watchers friendly a simple dough would be too many points.

    This was an awesome recipe. Thank you for sharing it with us. I added some black olives, green chilies and sprinkled the top with green onions when it came out of the oven. I used your Cafe Rio chicken in the recipe. My husband and I both loved it!

    Are the biscuits suppose to be cooked? I thought refrigerator biscuits where the ones that came in a can? I put them in raw and even after 60 min in the oven they were still raw in the middle. We ended up eating with mexi-rice and picking some of the turkey out - threw the rest in the garbage - what a disappointment.

    I just made this today. My parents were coming over so thought it would be great to try. I added diced green chilis, onions, corn and fire roasted peppers. It was so good I couldn't believe it. The only thing confusing was it said to use biscuits and to cut in quarters. I used reduced fat croissants and the recipe I had said to spread out along bottom but at the end of recipe it said to stir in with meat sauce. I did the first option and it turned out fine. I cooked for 1 hour though and then let sit for 20 min to set up a bit as it was so juicy. I will definitely make again. It's worth the 10 points !
