Ingredients
1cupbuttersoftened
2cupsbrown sugar
2eggs
1cupbuttermilk
1teaspoonroot beer extract
4cupsflour
1teaspoonbaking soda
1teaspoonsalt
Frosting
3/4cupbuttersoftened
4cupspowdered sugar
3Tablespoonsmilk
1teaspoonroot beer extract
Instructions
Preheat oven to 375 degrees F.
In a large bowl, cream butter and brown sugar.
Add eggs, one at a time, beating well after each addition. Next, beat in buttermilk and root beer extract.
Add flour, baking soda and salt to the bowl and beat until well combined. This is going to be a loose and wetter dough. Don't be alarmed at the consistency of the dough.
DROP by spoonfuls onto a greased baking sheet.
Bake at 375 degrees F for 10-12 minutes or until lightly golden in color. Remove from pan and allow to cookies to cool completely.
Frosting
Cream butter. Add in remaining ingredients and beat until well combined. Add more powdered sugar if it needs to be thickened up and a little more milk if you want it a bit thinner.
Once cookies are completely cooled, frost them.
