Root Beer Cookies

Perfect for summer. If you love Root Beer, you are going to LOVE these cookies!

Ingredients 

  • 1 cup butter softened
  • 2 cups brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon root beer extract
  • 4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Frosting

  • 3/4 cup butter softened
  • 4 cups powdered sugar
  • 3 Tablespoons milk
  • 1 teaspoon root beer extract

Instructions

  • Preheat oven to 375 degrees F.
  • In a large bowl,  cream butter and brown sugar.
  • Add eggs, one at a time, beating well after each addition. Next, beat in buttermilk and root beer extract.
  • Add flour, baking soda and salt to the bowl and beat until well combined.  This is going to be a loose and wetter dough.  Don't be alarmed at the consistency of the dough.
  • DROP by spoonfuls onto a greased baking sheet.
  • Bake at 375 degrees F for 10-12 minutes or until lightly golden in color.  Remove from pan and allow to cookies to cool completely.

Frosting

  • Cream butter. Add in remaining ingredients and beat until well combined.  Add more powdered sugar if it needs to be thickened up and a little more milk if you want it a bit thinner.
  • Once cookies are completely cooled, frost them.
