Zucchini Bread
Prep Time 10 minutes minutes
- 2 cups sugar
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 eggs
- 1 cup oil
- 2 teaspoons vanilla
- 2 cups shredded zucchini
Crumb Topping
- 1/2 cup butter cold
- 3/4 cup flour
- 3/4 cup oats
- 1 cup brown sugar
Mix all ingredients together.
Put into greased pans. Makes 2-3 loaves.
To make topping, cut butter into mixed flour, oats and brown sugar. Sprinkle topping over batter.
Bake at 350 for 1 hour. I also put a runny glaze on the top of mine, but it is good with out as well!
