Taco Mac and Cheese

This Taco Mac and Cheese is so easy and is such a delicious meal. It is loaded with spice, beef, pasta and a variety of tasty ingredients. This recipe is so simple to throw together and will become a new regular on the dinner line up.
  • 1 pound box Cellentani pasta, cooked and drained
  • 1 pound ground beef
  • 1¼ cups diced onion
  • 2½ cups water
  • ½ cup taco seasoning
  • 7 ounce can green chilies, drained
  • 28 ounces diced tomatoes, not drained
  • 2 cups frozen corn
  • ½ teaspoon salt
  • 1½ cups shredded cheddar cheese
  1. Preheat oven to 350 degrees F.
  2. Spray 9x13 baking dish with cooking spray.
  3. In a large skillet cook ground beef and onion until done. Drain fat.
  4. Add water, taco seasoning, green chilies, tomatoes, corn, and salt. Bring to a boil and then reduce heat to medium low. Simmer for 10 minutes.
  5. Place cooked pasta in baking dish. (I don't always use all of the pasta, it is about 1 cup too much). Pour sauce over the top and stir well.
  6. Sprinkle with cheese and bake for about 20 minutes or until cheese is melted.
