Skillet Butter Lemon Herb Chicken

This Skillet Butter Lemon Herb Chicken is loaded with a delicious butter garlic herb flavor and so simple to make. The chicken is so tender and juicy. This meal is a new family favorite!
  • 4 boneless chicken breasts, not too thick
  • 2 Tablespoon olive oil
  • 4 Tablespoons butter
  • 2 Tablespoons garlic
  • 2 Tablespoons chopped fresh basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon thyme
  • ¼ cup lemon juice
  • ⅓ cup chicken stock
  1. In a small bowl, combine basil, salt, pepper, and thyme. Set aside
  2. Pound the chicken until it is fairly flat and there are not any thicker portions.
  3. Salt and pepper the chicken.
  4. Heat a large skillet to medium high heat and oil. Place chicken in skillet and cook on each side for about 5 minutes. Check to make sure it is cooked through.
  5. Remove chicken from skillet and add the butter.
  6. Melt butter and then add garlic and the basil mixture.
  7. Sautee for about 30 seconds, and then add the lemon juice and the chicken stock.
  8. Simmer for 2 minutes on low and then add the chicken back in and spoon the lemon herb sauce over the top.
  9. Serve. Garnish with fresh basil
