No Bake Energy Bites

Ingredients
  • 1 cup oatmeal
  • ½ cup peanut butter
  • ⅓ cup honey
  • 1 cup coconut flakes
  • ½ cup ground flaxseed
  • ½ cup mini chocolate chips
  • 1 tsp vanilla
Instructions
  1. In a medium bowl, combine all ingredients and stir until thoroughly incorporated.  Cover with saran wrap and put bowl in fridge and let chill for half an hour.
  2. Once chilled, roll into 1 inch balls and enjoy!
  3. Store in an airtight container and keep refrigerated for up to 1 week.
